RESTORING THE OLD GLORY OF AMALA
By Taha Tijani
Amala is a popular Yoruba food. It is most often eaten with Ewedu soup, Vegetable soup, Okra soup, Gbegiri soup, and most preferred with Abula soup, a combination of Ewedu and Gbegiri soup.
Amala to Yorubas in Oyo, Osun, and Kwara is considered a number one food. The value ascribed to amala can be felt in functions like burials, weddings, naming ceremonies. When guests do not receive wraps of amala with delicacy soup, such an occasion would be tagged undelightful.
Elubo, from which Amala is made, has always been unevenly distributed across Nigeria, mainly due to the rigorous process in the production of elubo that begins with peeling of ikokoro yam, then blanching, drying, and pulverizing. And this production process is done in some parts of Kwara and the northern Oyo States.
The uneven distribution of elubo and high demand has caused the price of elubo to be on the high side. And like the economic law governing demand and supply; When the demand surpasses the supply, the price of a product will go up. Not just that, the uneven distribution of elubo has also caused a quality reduction of elubo. Most marketers, particularly in open markets add substances like Lafun (pulverized cassava), wheat, and alum to elubo to increase its quantity for maximized profit, consequently reducing its quality.
Nowadays, it is challenging to find unadulterated pure elubo in markets, so some consumers have sought alternative foods like Semolina, poundo yam, eba, plantain flour, e.t.c. However, research has shown that a lot more consumers who enjoy that original taste of amala wouldn’t mind how high the price of elubo is if it is high-quality undiluted. It is worthy to note that high-quality elubo will produce brown amala, not black.
Thus, Simply Elubo has set out to solve the problem of uneven distribution, high prices, and poor quality of Elubo.
