Here’s the secret: Don’t overmix your batter! 🙅‍♀️

I know it's tempting to keep mixing and mixing, but over mixing can cause too much gluten to develop, making your cake dense instead of light and airy.

The "t" in Thursday is for "throwback" 😁😁. We made this cake 3 years ago, about nine months out of baking school, literally spent the whole day on it actually 😂😂. And while there's a whole lot that we'd definitely do differently, the growth journey is one we're immensely grateful for.

The cake was for Dr. 's book launch, and birthday. I was also privileged to host the event which was probably one of my 2021 highlights!

Not bad for a less than one-year old baker, right? Or what do you think? 😉

Two Ways To Stay afloat as a Baker in These Times....

Dear bakers, how have we been balancing cost of production and profit?
Today, I thought to share two tips that I believe will come in handy for us.
To remain in business without running at a loss:
1. Stay on top of your costing game. This is not the time to say "I've never liked mathematics, I cannot sit down and be adding and dividing"
Please, learn how to cost your cakes properly.
You can get 20 orders in a month, and work like a horse without making profit. Why? You're probably costing your cakes wrongly!

2. Adjust your operations in order to minimise cost of production. You can do this by batch purchasing and batch producing, if your scale of operation permits that. Another thing is to adjust your recipe by substituting ingredients without compromising on quality, or change recipes altogether. You see, a crate of eggs now goes for N5,000 in some places, and if we'll be truthful, there's a limit to how you can keep increasing your prices without losing too many customers. So, minimisng your cost of production without compromising on quality is inevitable.
