Chocolate Chip Cookies Recipe

Ingredients

1 cup (225g) butter, softened
1 cup white sugar
1 cup brown sugar (or use all white sugar if you don’t have brown)
2 eggs
2 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
2 tsp vanilla extract
1–1½ cups chocolate chips

Instructions

1. Cream butter and sugars

In a bowl, beat butter, white sugar, and brown sugar until light and fluffy.

2. Add eggs + vanilla

Beat in eggs one at a time.
Add vanilla and mix well.

3. Combine dry ingredients

In another bowl, mix flour, baking soda, and salt.

4. Form the dough

Add dry ingredients to wet ingredients and mix until just combined.
Fold in chocolate chips.

5. Chill (optional but recommended)

Refrigerate dough for 30 minutes for thicker, chewier cookies.

6. Bake

Scoop dough onto a lined baking tray.
Bake at 180°C (350°F) for 10–12 minutes, until edges are golden.
Let cool on the tray for 5 minutes before moving.

Tips for Perfect Cookies

✨ Use half white + half brown sugar for extra chewiness
✨ Don’t overbake — they firm up as they cool
✨ For bakery look, press a few chips on top before baking

White Buttercream Frosting Recipe (Bright White)

Ingredients

250g unsalted butter, very soft and pale
4 cups (480g) sifted icing sugar
3–4 tbsp cold milk or water
1 tsp clear vanilla extract (important for white color)
Pinch of salt
Optional: a tiny drop of white gel food color (for extra whiteness)

Instructions

1. Whip the butter

Beat the butter on high speed for 5–7 minutes until it becomes very pale, almost white, and fluffy.
The longer you whip, the whiter it becomes.

2. Add sugar gradually

Add icing sugar in small batches, mixing on low first, then high.
Keep mixing until smooth.

3. Add liquids

Add the milk (little at a time), salt, and clear vanilla extract.
Beat again for 2–3 minutes.

4. Whiten it even more (optional)

Add a tiny amount of white gel color and whip.
This makes the frosting look bright snow-white.

Tips for Super White Buttercream

Use butter at room temperature but not yellow or oily.
Whip butter alone until it loses its yellow color.
Use clear vanilla extract (not brown).
Adding a teaspoon of cornstarch can make it smoother and firmer.

Yields

Scottish Shortbread Cookies Recipe

Ingredients

1 cup (225g) unsalted butter, soft (not melted)
½ cup (65g) granulated sugar or caster sugar
2 cups (240g) all-purpose flour
¼ cup (30g) cornstarch (optional but makes it more tender)
½ tsp salt (skip if using salted butter)
Optional: 1 tsp vanilla extract
Extra sugar for sprinkling

Instructions

1. Prepare the dough

1. Cream the soft butter and sugar together until pale and fluffy.
2. Add vanilla (optional).
3. Add flour, cornstarch, and salt.
4. Mix gently until a soft dough forms. Do NOT overmix.

2. Shape the cookies

Choose any of these classic styles:

Traditional wedge shape (round pan)

1. Press dough into a round baking tin (8–9 inches).
2. Smooth the top and score into 8 or 12 wedges using a knife.
3. Use a fork to poke holes decoratively.

Bar style

1. Roll dough to ½ inch thickness.
2. Cut into rectangles.
3. Dock (poke) with a fork.

Cut-out style

1. Roll to ½ inch thickness.
2. Use round cutters or shapes.

3. Chill

Refrigerate the shaped dough for 20–30 minutes.
This helps keep the shape and improves texture.

4. Bake

Preheat oven to 150–160°C (300–320°F).
Bake for 25–35 minutes until pale golden, not brown.
Sprinkle sugar lightly on top while still warm.
Allow to cool completely — they firm up as they cool.

Tips for Perfect Scottish Shortbread

Use real butter only (the flavour depends on it).
Low and slow baking gives the best crumbly texture.
If dough is too crumbly, add 1–2 tsp milk.
For extra melt-in-the-mouth texture, increase cornstarch slightly.

🥧 Flaky Nigerian Meat Pie Recipe

✅ For the Pastry (Crust)

500g all-purpose flour (about 4 cups)
250g cold butter or margarine
1/2 tsp salt
1 tbsp sugar (optional)
1 egg
1/2 cup cold water (approx)

✅ For the Filling

250g minced beef
2 medium Irish potatoes (diced small)
1 medium carrot (diced)
1 small onion (chopped)
1 seasoning cube
1/2 tsp curry powder
1/2 tsp thyme
Salt to taste
1 tbsp vegetable oil
1 tbsp flour + 1/2 cup water (for thickening)

✅ For Brushing

1 egg (for egg wash)

👩‍🍳 Instructions

1. Prepare the Filling

1. Heat oil in a pan, sauté onions till soft.
2. Add minced meat and cook until brown.
3. Add potatoes, carrots, seasoning, curry, thyme, and salt.
4. Pour in a little water and cook until vegetables are tender.
5. Mix 1 tbsp flour with 1/2 cup water and add to thicken.
6. Cook until slightly creamy (not watery). Set aside to cool.

2. Make the Flaky Dough

1. In a bowl, mix flour, salt, and sugar.
2. Rub cold butter into flour until crumbly (like breadcrumbs).
3. Add egg and cold water gradually to form a soft dough.
4. Do NOT over-knead. Wrap and refrigerate for 20–30 minutes.

3. Roll & Fill

1. Roll dough on a floured surface (not too thin).
2. Cut circles using a bowl or cutter.
3. Add 1–2 tbsp filling in the center.
4. Fold and seal edges with fork.

4. Bake

1. Brush with egg wash.
2. Bake at 180°C (350°F) for 25–30 minutes until golden brown.

🔥 Tips for Extra Flakiness

Use very cold butter.
Chill dough before rolling.
Don’t overwork the dough.
Ensure filling is cool before placing in pastry.
