As a baker, I've learned the importance of precise measurement.

I discovered that even a small mistake like one tablespoon off, can ruin the entire dough.
To achieve a consistent result, I’ve learned to strictly follow measurements.
I quickly embraced this principle and began applying it to other areas, such as cooking.

Now, I rarely cook without measuring. I calculate everything that goes into the pot because it helps me anticipate a specific outcome.

I’ve learned that both cooking and baking rely heavily on measurement.
You may have the right ingredients, but without the right proportions, success isn't guaranteed.

The first time I received a cake order, I was eager to showcase my talent most especially, I wanted to make my boss proud. I was still in school at the time and preparing for a professional exam.

The cake was to be delivered the day after my exam. I remember staying up all night to work on it, while others were relaxing after the just-concluded test.

Although I wasn't completely satisfied with how the cake turned out, I still delivered it the next morning. My true satisfaction came when the client sent me a video and a heartfelt message expressing appreciation for the cake. It was my first attempt, but the client was happy with it. 😌

During a recent conversation with a friend, he asked this question. He was considering getting a birthday cake for a relative who has diabetes.

The reality is that cakes can be made suitable for individuals with diabetes. The key is to avoid the normal sugar and refined carbohydrates, and instead use healthier alternatives.

For example, regular flour can be substituted with options such as almond flour, coconut flour, whole wheat flour, or oat flour.

Sugar can be replaced with natural or low-glycemic sweeteners like Stevia, Erythritol, or monk fruit sweetener.

Additionally, flavor enhancers such as vanilla, cinnamon, lemon zest, and orange zest can be used to enrich the taste without compromising health.

It is entirely possible to enjoy a sweet, sugar-free, and nutritious cake that is good for someone managing diabetes.

A Bad cake day.

I got a cupcake order from a client to surprise a friend, it was my first cupcake order. I was so happy throughout the night, hoping to start work the next morning.

Halfway into my work, everything began to look messy, the cup cake pan I thought I had was giving me a very bad result.

I tried calling some friends who are into baking to help out, but non was available.
Frustration was written all over my face, it got to a point, I had to sit down and cry. 😭😭

I started thinking, of how best to get this cake done, I tried many ways which led to consuming a whole 250kg batter just to make 6 cupcakes.

Meanwhile, I was to deliver the cake that same day by 1pm. Well, I did complete the cake and delivered by 1:30pm.

I was so happy when my client called to tell me how nice the cake was tho. But deep down in my heart I wasn't happy with the result.😞

Did I learn something from this, of course, and that is, to always have a back up plan.
