and richer.
3. Protein helps the cake
hold its structure.
4. Water adds moisture only.
No richness. No support.
That’s why milk cakes feel
softer and taste fuller.
5. Use water only when

1. Creaming time is misunderstood
More mixing does not mean better texture.
Under-creamed: not enough air, cake is heavy
Over-creamed: air bubbles get too large and burst in the oven
That collapse leads to tight crumbs and dryness.
Cream until:
Butter turns pale, Volume increases
Texture looks fluffy, not shiny
Then stop.
2. Mixing speed is wrong
High speed feels productive. It’s not.
Fast creaming heats butter too quickly and ruins structure.
Medium speed gives control and stable air pockets.
3. Sugar choice affects moisture
People ignore this.
White sugar helps with structure and crispness
Brown sugar holds more moisture
Swapping sugars without adjusting liquids changes texture.
Dryness often comes from careless substitutions.

The Fix:
Butter should be soft, not oily.
Cream till light and fluffy. Stop.

Too much mixing = tougher crumb = dry mouthfeel, even if moisture is technically there.
2. Oven temperature is higher than you think
Most home ovens lie.
If your oven runs hot, the outside dries out before the inside sets.

How To Fix That:
1. Control your oven temperature
If your oven runs hot, your cake suffers
2. Stop overbaking
Your cake doesn’t need to look bone-dry to be done.
3. Measure flour properly
Stop scooping from the bag.

2.The real problem?
Overmixing the batter.
When you mix too much,
you knock out the air
that makes cakes soft.
3.Incorrect measurements
Eyeballing flour is a crime in baking. Extra flour = dry, dense cake.
4.Overbaking
An extra 5 minutes can suck all the moisture out. Cakes keep cooking even after leaving the oven.

How To Fix It:
1.Stop mixing once the flour disappears.
Soft cakes come from
gentle hands, not speed.
2.Use oil or a butter–oil combo for softer crumb.
3.Measure properly, preferably with a scale or leveled cups.
4.Check your cake early and remove once a toothpick comes out with soft crumbs, not dry.

Most baking problems are small mistakes repeated every time.
I share simple fixes like this because soft cakes are not luck.
