Strawberry Sensation Ice Cream ๐Ÿ“

Ingredients:
- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tbsp vanilla extract
- Pinch of salt

Directions:
1. Prepare the Strawberry Mixture:
- Mix strawberries, sugar, and lemon juice in a bowl.
- Let it sit for 30 minutes until strawberries release juice and sugar dissolves.

2. Make the Ice Cream Base:
- Mix heavy cream, whole milk, sugar, vanilla extract, and salt in a bowl.

3. Combine the Mixtures:
- Pour strawberry mixture into the ice cream base and mix well.

4. Chill and Freeze:
- Cover the bowl and refrigerate for at least 2 hours or overnight until chilled.

5. Churn the Ice Cream:
- Pour the mixture into an ice cream maker and churn for 25-30 minutes until soft-serve consistency.

6. Freeze Again:
- Transfer churned ice cream to a container and freeze for at least 4 hours until firm.

Ingredients:
For the Red Velvet Cake:

2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 tsp baking soda
1 tsp salt
1 tsp cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tbsp red food coloring
1 tsp vanilla extract
1 tsp white vinegar
For the Cream Cheese Frosting:

16 oz (2 blocks) cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract
For the Strawberry Filling:

2 cups fresh strawberries, hulled and sliced
1/4 cup granulated sugar
1 tbsp lemon juice
For Garnish:

Fresh strawberries
Red velvet cake crumbs
Instructions:

Preheat your oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.

Make the Red Velvet Cake:

In a medium bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
In a large mixing bowl, combine the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar. Mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until smooth and well combined.
Divide the batter evenly between the prepared cake pans.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the cakes cool in the pans for 10 minutes. Then, transfer to a wire rack to cool completely.
Make the Strawberry Filling:

In a medium saucepan, combine the sliced strawberries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens, about 10-15 minutes.
Remove from heat and let cool completely.
Make the Cream Cheese Frosting:

In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition.
Beat in the vanilla extract until the frosting is light and fluffy.
Assemble the Cake:

Place one red velvet cake layer on a serving plate or cake stand. Spread a generous layer of cream cheese frosting over the top.
Spoon the strawberry filling over the frosting, spreading it out evenly.

No-Bake Peanut Butter Cheesecake
Ingredients:
For the crust:
2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
For the filling:
2 cups heavy cream
16 oz cream cheese, softened
1 cup creamy peanut butter
1 cup powdered sugar
1 tsp vanilla extract
1 cup mini chocolate chips
1 cup Reese's Pieces candy
For the topping:
1 cup heavy cream, whipped
1/4 cup powdered sugar
1/2 cup mini chocolate chips
1/2 cup Reese's Pieces candy
1/2 cup assorted mini chocolate candies
Chocolate syrup for drizzling
Instructions:
Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Place the crust in the refrigerator to chill while you prepare the filling.
Prepare the Filling:
In a large mixing bowl, whip the heavy cream until stiff peaks form. Set aside.
In another large bowl, beat the cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth and creamy.
Gently fold the whipped cream into the peanut butter mixture until well combined.
Fold in the mini chocolate chips and Reese's Pieces candy.
Pour the filling over the chilled crust and spread evenly.
Add the Topping:

Ingredients:

1 pound chicken breast, cubed
1 cup pineapple, cubed
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup jasmine rice
2 cups chicken broth
1 tablespoon soy sauce
1 teaspoon ginger, grated
Salt and pepper to taste
1/4 cup green onions, sliced
1 tablespoon sesame seeds

Directions:

In a large skillet, heat the olive oil over medium heat. Add the chicken cubes and cook until golden brown and cooked through. Remove the chicken and set aside.
In the same skillet, add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
Add the pineapple and cook for an additional 2 minutes.
Stir in the jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked through.
Return the chicken to the skillet, mix well, and heat through.
Serve garnished with green onions and sesame seeds.

1 cup chopped dates
3/4 cup boiling water
1 teaspoon baking soda
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
For the Butterscotch Sauce:

1 cup packed brown sugar
1/2 cup heavy cream
1/2 cup unsalted butter
1 teaspoon vanilla extract

Directions:

Preheat your oven to 350ยฐF (175ยฐC). Grease an 8x8 inch baking dish.
In a small bowl, combine the chopped dates, boiling water, and baking soda. Let it sit for 15 minutes.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then add the vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir the date mixture into the batter until well combined. Pour the batter into the prepared baking dish.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the pudding to cool in the dish on a wire rack.
