There are different kind of colours types that we can use on our cakes. By colour types , Iโm referring to the nature of the colour . This write up will help you understand why your different kinds of cakes covering behave in a certain way when you use the different food colour types.
๐๐ข๐ช๐ฎ๐ข๐ ๐๐จ๐จ๐ ๐๐จ๐ฅ๐จ๐ฎ๐ซ๐ฌ: Liquid food colours are synthetic colouring with water base . These colours are not concentrated.
So when you use them , you cannot expect to get deep colours. To get these colours deep, you may have to use so much.
Due to the nature of these liquid colours, if you add so much to fondant or buttercream,it may distort their consistency.
Its also not a wonder that when used to make red velvet cake, most times you donโt get the right shade you want , when the cake is eventually baked.
They can be found easily and are relatively cheap too.
๐๐ข๐ช๐ฎ๐ข๐ ๐๐๐ฅ ๐๐จ๐จ๐ ๐๐จ๐ฅ๐จ๐ฎ๐ซ๐ฌ: These are synthetic colouring with water ,glycerine and corn syrup .
They are a bit more concentrated than their liquid food colours counterparts , so they produce a deeper shade.
They also easily change the consistency of buttercream and fondant, so it should be used wisely.
They are not readily available and are a bit expensive.
๐๐๐ฅ ๐ฉ๐๐ฌ๐ญ๐ : These are synthetic colours with water, glycerine and /or corn syrup. They are thicker than both the liquid gel and the liquid food colour .
They produce more vibrant and concentrated colours and the colours become deeper with time. This why you shouldnโt use too much.
Although , these colours are gel paste, when used in large quantities, it changes the consistency of fondant. For example, black, red or blue colour.
Therefore, always add extra icing sugar and or CMC to your fondant to harden a bit.
๐๐จ๐ฐ๐๐๐ซ๐๐ ๐๐จ๐จ๐ ๐๐จ๐ฅ๐จ๐ฎ๐ซ๐ฌ : These are colours with no water, glycerin or corn syrup . They are perfect to use in mixtures that are sensitive to the amount of liquid added .
Although adding too much can cause drying out of whatever item it is used on . They are available in different colours and relatively cheap. They also produce deep and vibrant colours too.
๐๐๐ญ๐ฎ๐ซ๐๐ฅ ๐๐จ๐จ๐ ๐๐จ๐ฅ๐จ๐ฎ๐ซ๐ฌ: These are colours got from natural plant sources. They contain neither glycerine or corn syrup. They can be used as a quick alternative when the desired is unavailable.
Examples :
* Red: beetroot
* Orange: carrots, paprika, sweet potato.
* Yellow: saffron, turmeric.
* Green: matcha, spinach.
* Blue: red cabbage + baking soda.
* Purple: blueberries, purple sweet potato.
* Brown: coffee, tea, cocoa.
* Black: activated charcoal, squid Ink.

These are used mainly in chocolate and candy melts. This is because both chocolate and candy melt contain some oil, therefore they get tinted better with oil based colours.
