Mouthwatering ewa agoyin beans.

Ingredients:
-3 cups Black Eyed Beans
-300ml Palm Oil
-8-10 Pieces Dried Bell Peppers (Tatsahe gbigbe)
-1 Medium Size Red Onion
-2-3 Pieces Cameroon Pepper
-3 Heaped Tablespoons Dried Pepper Seeds
-1 Tablespoon Ground Pepper (Atagungun)
-1/2 Teaspoon Minced Ginger
-2 Tablespoons Dried whole crayfish or 1/2 cup smoked fish(optional)
-1 Maggi Crayfish (optional)
-Salt.

Cooking directions:
-Blend your pepper, minced ginger, crayfish & Maggi crayfish together; Set aside.
-Pick and wash your beans, cook till tender.
-Once fully cooked, use wooden spoon to mash the beans till there’s almost no whole beans in sight.
-Get yourself a saucepan and bleach your palm oil for 10 mins; Add your chopped onions and fry until it's a little burnt.
-Add your blended pepper, ground pepper, smoked fish and salt to taste. Still on low heat, let it fry for at least 40 minutes.
-Your sauce should look a bit black but not burnt.

-Serve and enjoy...🤗

GOAT MEAT PEPPER SOUP RECIPE

INGREDIENTS
*1200 g goat meat washed and cut up)
*1 onion (chopped)
*2 garlic cloves (crushed)
*2-3 scotch bonnet / habanero pepper (chopped)
*1 Tbsp Pepper soup spice
*1-2 Tbsp coarsely ground crayfish
*1 small bell pepper (chopped)
*2 stock cubes
*Salt to taste
*scent leaves/uziza leaves (optional).

HOW TO PREPARE GOAT MEAT PEPPER SOUP
*Place meat in a pot, fill with water enough to cover the meat generously.

*Add the onions, crushed garlic, stock cubes and some salt and allow to come to a boil

*When the contents in the pot begin to boil, add the pepper soup spice, ground crayfish ( if using ) and the chopped habanero pepper.

*Cook till the meat is tender and cooked through, then lower heat to a simmer. Taste for seasoning and adjust accordingly.

*Add the chopped red bell peppers and the chopped uziza. Allow simmer for a minute, then turn off heat. Enjoy warm.

Ingredients
Eggs
2 cups of white wheat or all purpose flour
½tsp baking powder
¼ cup of softened unsalted butter(salted butter works too)
⅓ cup of evaporated milk
3-4tbsps of water
1tsp of salt
1tsp of black pepper
¼tsp of nut meg
1½ of sugar
½tsp of dry grinded pepper or red pepper flakes
3-4cups of oil for frying.

Instructions

Boil the eggs for about 5 minutes. soak in cold water and gently peel off the hard shell.
Sieve the flour and add all the ingredients except the milk and water. Combine until the mixture looks a little grainy; then add the milk. If the milk is not enough, add some more or finish off with the3-4tbsps of water until the dough forms. Knead
On a clean and floured work top, roll out the dough. Using a small bowl or a small round cookie cutter, cut out circles big enough to fit each egg.
Gently place each egg into the cut out dough and roll together to form a ball while smoothing it out with the palm of your hands.
Cover the rolled dough egg rolls with a cling wrap and let them rest for 30 minutes to an hour in the refrigerator.
Heat up the oil for frying in a deep frying pot. Using a well rounded spoon, drop each ball into the hot oil and fry until golden brown. Using a slotted spoon, remove from the oil, drain on to a paper towel and serve with a chilled drink, or as an appetizer.

Ingredients
1 Goat head
2 teaspoon of Ehuru (calabash nutmeg)
1 handful of sliced Utazi leaves
1 teaspoon of edible potash (akaun)
3 cubes of seasoning
2 medium-sized onions
2 tbsps of blended fresh pepper
1 cup of palm oil
1 tbsp of crayfish (optional)
Salt to taste

Note:
Goat head has a thick bone and comes with a sooth filled skin. Be sure to tell the butcher to scrape and cut into pieces while making sure that essential parts remain whole such as the ear, tongue and the brain. The brain is set aside from the rest of the meat because it is used also as a thickener for the sauce.

Before we cook, be sparing in your use of water, you need little water for the stock.

Method
In a pot, place the meat with the brain included, adding an onion (grated), the seasoning, a tablespoon of pepper, salt, water and allow to boil until the meat is tender.
While the meat boils, slice the other onions into rings, dissolve potash with a little amount of water and sieve.
A while into the meat boiling, take out the brain and place in a small mortar, add the other spoon of blended pepper and mash. When the meat is ready, separate stock from meat.
Pour oil into another dry pot. Little by little, pour potash into the oil and stir with a spatula until palm oil turns yellow and thicken.
Add the mashed brain, the stock of the meat, ehuru, crayfish, and continue to stir until blended.
Place the meat into the mixture and stir. Turn on the heat, until steaming hot.
Garnish with sliced onion rings and utazi leaves. Serve in a small wooden mortar.
