A six-inch lemon cloud sponge cake layered with homemade passion fruit lemon curd, lightly crumb-coated with Chantilly cream and finished with another generous layer of passion fruit lemon curd on top.

Less sweet and wonderfully refreshing, with the perfect balance of sweetness and tanginess. Light, zesty, and bursting with citrus flavours in every bite.

I had the honour of attending a bread-making masterclass by renowned Taiwanese chef Katsumi Wu about three years ago.
Recently, I followed his milk toast recipe from one of his baking books, and the bread turned out beautifully tall with an incredibly soft and fluffy crumb.
Made using 100% Hokkaido bread flour, Japanese sugar, and Hokkaido milk..
