Croissant Dough
Ingredients
4 cups bread flour
1/4 cup sugar
2 tsp instant yeast
1 1/2 tsp salt
1 cup warm milk
10 tbsp cold unsalted butter (for lamination)
Method
1. In a bowl combine bread flour, sugar, yeast, and salt.
2. Add warm milk and mix until a soft dough forms.
3. Knead for 8–10 minutes until smooth.
4. Cover and let the dough rise for 1 hour or until doubled.
5. Roll dough into a rectangle. Place cold butter in the center and fold dough over it.
6. Roll out and fold into thirds (lamination). Chill 30 minutes.
7. Repeat rolling and folding 2–3 times.
8. Roll dough thin, cut into triangles, and roll into croissants.
9. Proof 45–60 minutes.
10. Bake at 375°F (190°C) for 15–20 minutes until golden.
Hot Dog Bun Dough
Ingredients
3 1/2 cups bread flour
3 tbsp sugar
1 tbsp instant yeast
1 1/2 tsp salt
1 1/4 cups warm milk
1/4 cup softened butter
Method
1. Combine bread flour, sugar, yeast, and salt in a mixing bowl.
2. Add warm milk and softened butter.
3. Mix until a soft dough forms.
4. Knead 8–10 minutes until smooth and elastic.
5. Cover and let rise 1 hour until doubled.
6. Divide dough into 10 portions and shape into buns.
7. Place on a baking tray and proof 30–40 minutes.
8. Bake at 375°F (190°C) for 15–18 minutes until golden brown.
English Muffin Dough
Ingredients
3 1/2 cups bread flour
1 1/2 cups warm milk
2 tsp instant yeast
1 tbsp sugar
3 tbsp softened butter
3 tbsp cornmeal (for dusting)
1/2 cup semolina (optional)
Method
1. Mix flour, yeast, and sugar in a bowl.
2. Add warm milk and butter and mix into a soft dough.
3. Knead 8 minutes until smooth.
4. Cover and let rise 1 hour.
5. Roll dough to 1/2-inch thickness.
6. Cut rounds using a cutter.
7. Dust with cornmeal and rest 30 minutes.
8. Cook on a hot griddle over medium heat 6–7 minutes per side until golden.
Sweet Bun Dough
Ingredients
3 1/2 cups all-purpose flour
1/4 cup sugar
1 tbsp instant yeast
1 tsp salt
2 eggs
1/2 cup warm milk
1/4 cup softened butter
1/2 cup jam or custard (for filling)
Method
1. Combine flour, sugar, yeast, and salt in a bowl.
2. Add eggs, warm milk, and butter.
3. Mix and knead 10 minutes until smooth and elastic.
4. Cover and let rise 1 hour until doubled.
5. Divide dough into 16 portions and shape into buns.
6. Fill with jam or custard if desired.
7. Proof 30–40 minutes.
8. Bake at 375°F (190°C) for 15–18 minutes until golden brown.
