Happy International Tea Day 🍃
I pulled every tea powder out of the fridge and turned them into Sable Nantais.
Same recipe.
Same butter.
Same flour.
Yet every tea behaved differently.
Some doughs were softer.
Some darker.
Some more fragrant.
Some surprisingly subtle.
One of the things I enjoy most about baking with tea is that tea is never just a flavour.
It changes the colour, aroma, texture and sometimes even the way a dough feels in your hands.
If you could only pick one tea for a cookie, which would it be?
