Second attempt at croissants… and I still can’t believe I pulled this off.
I challenged myself to make them completely by hand, no dough sheeter, just a rolling pin, patience, and a conventional oven.
In Malaysia’s humid weather, every fold was a battle
Roll → fridge
Fold → fridge
Roll again → fridge again
Keeping the butter cold enough while laminating felt like a workout on its own.
But seeing those layers and hearing that crispy crust made every hour worth it.
Definitely not perfect yet, but for a second attempt, I’m pretty proud of these flaky little beauties.

Once you truly understand croissant dough and lamination, you unlock a huge family of viennoiserie pastries because they all use very similar techniques.
Croissants are one of the hardest foundations, so mastering them gives you a strong base for many others.
Here are pastries you’ll be able to make from the same laminated dough:
Pain au chocolat
Same dough, just shaped with chocolat, Danish pastr, etc
