My philosophy of work life is to enjoy the way we spend our days - life is too short to be miserable especially while we're at work because we spend more than 2/3 of our waking lives there. I didn't chose to be a baker because I wanted to start a bakery or be known as a Chef Patisserie. I fell in love with making bread the first time I was taught to do so. And from then on, I love making bread - a

nd baking in general. I make it a personal mission to create that perfect loaf each time I bake and I take great pride in each loaf, painstakingly hand-kneaded, hour upon hour. to carefully bake beautifully handcrafted bread that tastes as good as they look;
2. to provide a personal service that makes you smile;
3. to maintain a professional and congenial environment and personal attitude towards what I do;
4. to strive to use ingredients and procedures that sustains the health of our environment. I thank you for all your support!

Know When to Knead, When to Wait, and When to Apply Heat

One of the hardest lessons I’ve learned in leadership is knowing when to apply pressure, when to step back, and when to let go.

Leadership, I’ve come to realize, is a lot like making bread.

At the beginning, you knead the dough.
That’s where structure is built—clear expectations, tight standards, discipline. Early in my career, I applied pressure constantly. Deadlines were firm, accountability was high, and performance was non-negotiable. That kneading phase shaped many strong performers. Without it, there is no form.

But if all you do is knead, the dough tears.

So you let it rest.
This is where trust comes in. Leaders step back. Talents are given space to think, to decide, to grow. I’ve seen people surprise themselves—and me—simply because I stopped hovering and allowed them time to rise.

Then comes the uncomfortable part.

When the dough rises too much, it fills with air. In leadership terms, this is where confidence quietly turns into ego. I’ve seen high performers become entitled, disconnected, or too sure of themselves. At that point, leaders must punch the dough down—through honest feedback, tough conversations, and reality checks. Not to break people, but to ground them.

This cycle repeats:
• Pressure to form
• Space to rise
• Correction to stay grounded

Only after that do you shape the dough—preparing someone for bigger responsibilities, broader exposure, and real leadership weight.

And finally, the dough goes into the oven.

That’s the test of fire. Pressure. Visibility. Consequences. Accountability.

Not everyone survives this stage. I’ve had to let go of people I believed in deeply. Some weren’t ready. Some weren’t meant for that season. And that’s part of leadership too—knowing when to stop protecting and start allowing reality to do its work.

Rush the process and the bread collapses. Skip a step and it’s undercooked. Great leadership, like great bread, takes timing, restraint, and courage.

Know when to knead.
Know when to wait.
And know when to let the heat reveal who’s ready.
