Another off my Bucket List; I have Always wanted to make a Tomato Cherry Confit so that’s what I am doing now. Searched among my things for a narrow Tempered Glass, as I told the Baba to buy 250 ml of Olive Oil as I don’t know whether I would like the Tomato Confit, he came back with Extra Virgin Oil Oil, even better!!! Bought a medley Cherry Tomatoes on the vine. Washed them then spung them on the Salad Spinner to make the Tomatoes & Thymn absolutely dry. Place the Cherry Tomato among the Oil, Garlic, sprigs of our home grown Thyme, sprinkle some Salt & freshly ground Black Pepper for the ump & into the oven. Waiting impatiently, haha to see whether I would like it. Hmn, more likely whether the Baba likes same.

Eating the Chocolate Sponge Cake cm Bread was awesome. Nelly Chua This dough was kneaded first & then allowed it to prove/rise & 15 minutes before it has proved sufficiently, whisk the Chocolate Sponge mixture, here I made a detour from what I learnt from my Sifu, (I added a little Stablisher so that the Sponge Cake on top of the Bread, can have a soft finish as the last round I made this, the Chocolate Sponge was a little hard), & I was right. The Cake Bread was lovely & the Chocolate Sponge on top & sides gave it a nice touch & not overly sweet. Recipe was for 2 loaves, perhaps I added one too much of the Chocolate Sponge mixture that it overflowed, despite having a cover on the Bread Tin, so second loaf just had a “botak” look but it is ok as I know where my fault is & know what to do next time, next year; no more making Bread for the test of the year as will be busy with prepping & marinating the Dried Fruits for the Christmas orders.

Been baking so many loaves of Bread with a span of 15 days & each time 2 loaves at one go as the Baba asked me to bake & of course this kiasu takes the opportunity to try the different kinds of bread & this one I did 3 days ago uses Custard Powder & the Bread was soft & had a slight tinge of Yellow. It is easy & therapeutic to bake Bread. The last time I baked so many loaves was during the pandamic as there was a mad rush for Bread.

Seeing this again to Inspire myself to make my Gum Paste from scratch again.

A very good friend, on seeing the Blue Berry Panna Cotta I made recently for the Hubs asked me to make these for her. Told her I needed to get the plastic containers first. Was a little upset that despite going to many shops, market, I couldn't find the same curvy ones that I used before. So finally settled for the other. The only consolation was that it could contain more of the panna cotta. So would be making the Blue Berry coulis with 500 gm of Blue Berries, infused same with the Rum & putting it in the fridge for a day or two in order for the Rum to infuse in the Berries & then only make the Panna Cotta.

Wow, my husband’s message to his siblings. ty never tot I would “hear” him say this. “Heard this adage: "When the going gets tough, the tough gets going".

Yesterday is an example how people will go at length to gain knowledge & fullfill one's career with the desire to excel in whatever they do in life for the benefit of their own future wellbeing for financial independence.

Nita's student, a mother & a baker herself came all the way from Sitiawan, Perak with an overnight stay in PJ to attend Nita's baking class.

I admire her for the sacrifice, determination, astuteness & the positive values in her.

She reads reviews from Nita's clientele base & even bought to taste before registering for the class.

And yesterday she left for home satisfied with her investment”.
