Another off my Bucket List; I have Always wanted to make a Tomato Cherry Confit so that’s what I am doing now. Searched among my things for a narrow Tempered Glass, as I told the Baba to buy 250 ml of Olive Oil as I don’t know whether I would like the Tomato Confit, he came back with Extra Virgin Oil Oil, even better!!! Bought a medley Cherry Tomatoes on the vine. Washed them then spung them on the Salad Spinner to make the Tomatoes & Thymn absolutely dry. Place the Cherry Tomato among the Oil, Garlic, sprigs of our home grown Thyme, sprinkle some Salt & freshly ground Black Pepper for the ump & into the oven. Waiting impatiently, haha to see whether I would like it. Hmn, more likely whether the Baba likes same.
