Food Fairy Bakes Foodfairy bakes was born out of the love in 2018 for all things baked. It was a name coined by friends whom I used to gift my cakes and pies to.

The name stayed and I continued to bake and spread fairy good bakes to everyone else.

Ever wondered why so many baking recipes call for eggs?
They’re more than just a binding ingredient — eggs are the backbone of texture, structure, and flavor.

Here’s what eggs do:

Structure: The proteins in eggs set as they bake, giving your cake that perfect crumb.

Moisture: Eggs balance the dry ingredients, keeping your bakes soft and tender.

Leavening: Whisked eggs trap air, helping your cakes rise beautifully.

Color & Flavor: That golden hue and rich taste? Thank the yolks.

💡 No eggs? No problem!
Here are some tried-and-true egg substitutes depending on what you’re baking:

Flaxseed “egg” – 1 tbsp ground flaxseed + 3 tbsp water (great for dense cakes or brownies)

Applesauce – ¼ cup per egg (adds moisture and sweetness)

Yogurt or buttermilk – ¼ cup per egg (perfect for muffins or loaf cakes)

Vinegar + baking soda – 1 tsp vinegar + 1 tsp baking soda (helps with rise in light cakes)

Let’s Talk About Ganache!

Silky. Glossy. Decadent.
Ganache is the soul of many desserts — from truffles to tarts, cakes to cupcakes.

What is Ganache?
Ganache is basically a simple mix of chocolate + cream. But this humble duo can do so much depending on how you treat it.

Types of Ganache & Ratios
1:1 (Equal Parts)
→ Thick but pourable. Perfect for glazes, drips, or whipped fillings.

2:1 (More Chocolate)
→ Rich & firm. Ideal for truffles or thick cake fillings.

1:2 (More Cream)
→ Soft & smooth. Great as a light glaze or sauce.

Want it softer? Add a bit of butter.

Want it firmer? Chill longer or add more chocolate!

Some extra tips for different consistency:
* Let it cool to thicken for piping
* Whip it for a fluffy frosting
* Pour it warm for glossy drips

Bonus: White chocolate ganache is more delicate and needs different ratios (usually 3:1 chocolate to cream)!

Ganache is proof that sometimes, the simplest things are the most magical. I guess there's a reason that chocolate is always found in the most popular desserts around the world!

Vanilla may be a baking staple today, but did you know it was once worth more than silver?

Vanilla originates from the orchid Vanilla planifolia, native to Mexico. The Aztecs were the first to use it — blending it with cacao to create a luxurious drink reserved for royalty. After being introduced to Europe in the 16th century, it quickly became a coveted flavour.

Real vanilla extract is made by soaking vanilla pods in alcohol and water for months — slowly drawing out its complex, aromatic compounds. That’s why pure vanilla is pricier than your average flavouring!

*the Halal version is soaked with glycerine.

* Each vanilla orchid flower opens for only one day
* It takes about 9 months to grow a single vanilla bean
* Madagascar is the largest producer of vanilla today
* The scent of vanilla is proven to reduce stress and anxiety — now we know why baking feels like therapy! So... vanilla-on my dearies!
