Some of you might be wondering, "ngaiti, use gula apong meh, must be sibeh sweet one walao."
Yes, we got that in mind when perfecting the recipe. We too, don't like super sweet stuffs.
We played around with the ratio, trying to get a balance between "too sweet" and "walao they forgot to put sugar is it?".
Final test batches were sent out to tasters of different age groups, which includes aunties, uncles.
Most of them said "This one HO LIAO OH".

Aiya, we say so much also no use mah, must taste it yourselves then only you will know. 😂

Gula Apong Basque Burnt Cheesecake!

For those who don’t know, Gula Apong is iconic in Sarawak.
Produced from the sap of nipah palm, Gula Apong boasts a unique caramelised flavour, that cannot be found in any other sugar.
Because of its rich flavour, it’s widely used as sweetener in local desserts, such as ais kacang, cendol, kuih penyaram and a lot more.

Out of curiosity, we tried adding Gula Apong into Basque Burnt Cheesecake.
ngaiti, we can never go back to the normal BBC liao since then.
The mild aroma of Gula Apong blends so well with cream cheese.
Not too overpowering, not too subtle, just nice.
The burnt top of the cake brings the caramelised flavour to a whole new level.
The cake just melts in your mouth with the slightest push from your tongue.
ngaiti, it’s beyond words.

I still remember when I was young, we'll be back at my late grandpa's kampung at this time. Those were the great times with extended family and cousins. The best part is definitely the lemang and curry. My uncle is a pro in making lemang. Oh man, I'm drooling already. 🤤
What's your favourite memory of Gawai? 😄

We are still in the midst of pandemic, let's love our neighbours, grandpa, grandma, aunty, uncle, cousin, niece and nephew by staying at home. 😷🏠
