How To Make Chocolate Ganache

At its simplest, chocolate ganache is a mixture of chocolate and cream that results in a mixture that can be used as a glaze, sauce, topping, filling, or even frosting for many desserts.

Ganache is such a simple thing to make, but that doesn’t mean we can just toss everything in a bowl and hope for the best. Let’s talk through the best way to make it.

You will need two simple ingredients: chocolate and cream.

🍫 For a standard ganache, I like to use semi-sweet chocolate chips. You can also use finely chopped semi-sweet chocolate bars. I recommend splurging for a high-quality chocolate

🍫 You can also use milk chocolate or dark chocolate in your ganache. Just keep in mind that the final flavor and sweetness of the ganache will vary if you use either of those.

🍫You will also need heavy cream. Yes, you really must use heavy cream (or heavy whipping cream) instead of milk or half-and-half in this recipe – you need the fat from the cream to give the ganache the right texture.

🍫Some recipes will include butter, which gives the ganache a beautiful sheen, corn syrup, which can sweeten the ganache and help it set up as a glaze, salt, and/or flavorings and extracts.

🍫 Add your chocolate chips or chopped chocolate to a heat-proof bowl and set this aside.

🍫Pour the cream into a saucepan and heat it over medium-low heat, just until the cream starts to simmer.

🍫Remove the cream from the heat and immediately pour it over the chocolate. Cover the bowl and let it rest for 5 minutes. Letting the mixture rest before stirring helps increase the temperature of the bowl and the chocolate, which will help the chocolate melt more consistently.

🍫After 5 minutes, uncover the bowl and stir until the chocolate is completely melted and the mixture is well combined.

So exactly how do you use ganache now that you’ve made it? Well, there are a lot of ways to use this magical mixture, ranging from using it while it’s hot to chilling it before using it. When the ganache is still warm, it is very thin and pourable. Here are some ideas for using warm ganache:

- Pour it over cooled cakes, bundt cakes, or brownies such as easy chocolate bundt cake, chocolate zucchini cake, and salted caramel brownies.

- Dip cake donuts or scones such as chocolate glazed donuts.

- Use as a sauce on bread pudding, pancakes, waffles, ice cream, etc. It’s the perfect way to dress up no-churn ice cream or buttermilk pancakes.

No Bake Recipes: Oreo Cheesecake

Needed something for your sweet tongue ? I think this is exactly just what you need 🫣

Aside from being easy to make, one of my favorite things about No Bake Oreo Cheesecake is that it only uses 6 ingredients:

- Cream cheese
- Powdered sugar
- Vanilla
- Frozen whipped topping
- Butter
- Oreos! (Of course!)

1. Line an 8×8-inch pan with foil. Make sure to leave at least 1 inch of foil hanging over the sides of the pan. This will give you a “handle” to lift the cheesecake from the pan later for easy slicing and serving.

2. To make the crust, just stir together the crushed Oreos and the melted butter and press this mixture into the pan.

⭐️ Use the flat bottom of a measuring cup to press the crust into the pan evenly!

3. To make the filling, beat the cream cheese with an electric mixer for 2 minutes before gradually adding the powdered sugar and vanilla extract.

4. Then grab a spatula and fold in the whipped topping. And into the pan it goes!

5. Cover and refrigerate the cheesecake for at least 3 hours.

⭐️ To serve, use those handy foil edges to lift the cheesecake from the pan, slice it, top with cherry pie filling, and enjoy!

How to Make Self-Rising Flour

Have a recipe that calls for self-rising flour but can’t find it at the store? No problem! Learn how to make self-rising flour with all-purpose flour and two more simple ingredients.

You can easily make a self-rising flour substitute with three simple ingredients:

⚫️ All-purpose flour
⚫️ Baking powder
⚫️ Salt

1. For each cup of all-purpose flour, you will need 1 ½ teaspoons of baking powder and ¼ teaspoon of salt.

2. Whisk the all-purpose flour, baking powder and salt together until combined, then use as directed in the recipe in place of the self-rising flour.

You can use this method to make the exact amount of homemade self-rising flour that you need for a specific recipe. For example, if a recipe calls for 2 cups of self-rising flour, you would mix together 2 cups of all-purpose flour, 3 teaspoons baking powder, and ½ teaspoon salt.

Tips & Tricks: How to Soften Cream Cheese

The easiest and best way to soften cream cheese is to simply allow it to sit at – room temperature. That’s pretty much a no-brainer, right?

But this method usually means that you have a bit of a plan in place. If I know that I am going to baking any of my favorite cheesecake recipes early in the morning, I always take my cream cheese out of the fridge and allow it to sit on the counter for a couple of hours

1. Simply cut the block(s) of cream cheese into fourths lengthwise and then cube into small pieces. The smaller the cubes, the quicker the cream cheese will soften.

2. Spread the cubes out onto a cutting board or plate, making sure they aren’t touching. Then just leave them at room temperature for about an hour or until soft to the touch.

Depending on how warm it is in the house, the cream cheese doesn’t always take a full hour to soften. Just check on it periodically!

If you bake a lot, I’m betting you’ve attempted to soften butter in the microwave, right? Did you know that you can do the same thing with cream cheese?
Softening cream cheese in the microwave is quick. But it can also be tricky because if you get distracted, you’ll end up with a pool of melted cream cheese instead of a beautifully softened block.

BUT ! if you are really, really short on time and want to give the microwave method a shot, here’s what to do:

1. Unwrap the block(s) of cream cheese and place on a microwave safe plate.

2. Place the plate into the microwave and heat on 50-75% power for 5 seconds. Open microwave, give the block 1/4 turn (meaning, pick it up and flip it over onto its side) and heat again for 5 seconds. Do this on all four long sides of the block(s) of cream cheese.

3. Typically after about 20-25 seconds my cream cheese is perfect. This time will vary depending on your microwave – simply watch it closely and keep flipping it. The flipping action will help the cream cheese to evenly soften.

🍰 HOW LONG CAN CREAM CHEESE SIT OUT?

Curious about how long cream cheese can safely sit out at room temperature?
Food safety experts with the U.S. government say that 2 hours is the max that cream cheese should sit at room temperature. Other experts recommend no more than 4 hours.

⭐️ And there you have it, my not-so-technical methods of bringing cream cheese to room temperature on the fly. I hope it helps you out the next time you feel the urge to bake up a recipe in a hurry! (May I suggest trying Lemon Cheesecake, my Salted Caramel Cheesecake or my Gooey Butter Cookies?)

No Bake Recipes: Biscoff Cheesecake

If you’re craving cheesecake but don’t want to turn on the oven, these no-bake Biscoff cheesecakes are the perfect recipe for you. They’re great when it’s too hot to bake anything, and they’re perfect when you’re craving warm spices.

Ingredients you’ll need

🍪 For the Crust:
- 12 Biscoff cookies crushed into crumbs (1 cup of crumbs)
- 2 tablespoons unsalted butter melted

For the Filling:
- 8 ounces cream cheese softened
- ⅔ cup Biscoff Spread
- 1 teaspoon pure vanilla extract
- 8 ounces frozen whipped topping thawed

🍰 For the Garnish:

Instructions
- In a medium bowl, stir together the Biscoff cookie crumbs and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.

- In a large bowl, with an electric mixer, beat the cream cheese and Biscoff Spread on medium-high speed until smooth and creamy, about 3 minutes. Add vanilla and mix to combine. Using a rubber spatula, fold in the whipped topping until well blended and no streaks remain.

- Evenly pipe or spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.

- If desired, garnish with additional whipped topping and Biscoff cookie crumbs.

- Store in the refrigerator, covered, for up to 3 days.

TIPS

⭐️ Before making the filling, make sure your cream cheese has softened to room temperature. To make the crust, stir together the cookie crumbs with the melted butter. Divide the crumbs evenly between your serving dishes and press the crust into the bottoms of the bowls.

⭐️ To make the filling, use a mixer to beat the cream cheese with the Biscoff spread until smooth and creamy. This will take about 3 minutes. Add the vanilla until combined.

⭐️ Cover with plastic wrap and refrigerate for at least 2 hours before serving.
Just before serving, garnish with additional whipped topping or homemade whipped cream and Biscoff cookies or cookie crumbs, if desired.

⭐️ These no-bake Biscoff cheesecakes need to chill in the refrigerator for at least 2 hours before serving, so they’re a great option to make ahead of time. You could easily make these cheesecakes the day before you plan to serve them – just wait to garnish them until right before serving.

⭐️ The cheesecakes will keep in the fridge for up to 3 days. Keep them covered with plastic wrap so they don’t pick up any funky odors from your refrigerator! I don’t recommend freezing the cheesecakes, though. The texture of the filling may not be quite the same after thawing.

We’re back with more tips and tricks you can learn as a beginner in baking! As a baker, it is a known fact that we should be skilled in the kitchen, and that does not stop us to know every type of food’s best before durations. Because wasting food is never cool.

Packaged products with a shelf-life greater than 90 days — such as canned foods, dry goods (rice, pasta, and dried beans) and frozen food — don’t need a best-before date, but may still include one. Those year-old crackers and potato chips probably won’t make you sick; they’ll just taste a bit stale.

For perishables prone to spoilage, here’s what you need to know when it comes to best-before dates,

1. Meat: All fresh meat and poultry, as well as cured meats, like bacon and lunch meats, should be consumed by their best-before date. Bought an extra-large package of chicken breasts on sale? Freeze what you know you won’t get through prior to the best-before date. Same goes for bacon and deli meats—they’ll last in the freezer for up to one month.

2. Dairy: Can you eat yogurt past the best-before date? Milk, yogurt and whey cheeses, like cottage cheese and ricotta, should be eaten by the date marked on the package. Ultimately, however, the choice is yours, but consume at your own risk. Lower-moisture dairy products, such as firm, hard or processed cheeses and butter, are more forgiving and can last in the fridge anywhere from eight weeks for butter, to up to ten months for hard cheeses.

3. Eggs: Eggs should last in the fridge for three-to-four weeks. Have eggs a day or two past the best-before date, and crave a quick scramble? Do a quick freshness test to determine if your eggs are okay before cracking them open. Be sure to cook thoroughly before eating.

4. Produce: Produce will lose textural quality and colour with time, but that doesn’t necessarily mean it’s inedible. Some veggies, like spinach, can actually last for two to four weeks in the fridge. Even if the greens start to wilt, they can still be cooked up into a tasty frittata! Another consideration is the nutritional content of the food in question. For example, orange juice may lose some of its vitamin C after the best-before date, but still be safe to drink.

5. Prepared food: Foodstuffs that feature a “packaged-on” label include items that have been prepared at a retail store (think pre-made sandwiches, deli salads, sliced fruit and vegetables). These must also have a best-before date to let consumers know how long the item will remain fresh.

For products with strict expiration dates, there is only five foods expire and should not be eaten after a best-before date, including meal replacements, baby formula, protein bars and a couple of prescriptions. Otherwise, those dates identify the "key freshness" of a product, not its safety, and the dates are often very conservative.

7 Rules For Baking The Perfect Cake (And What To Do When You Mess Up)

Don't let your cakes fall flat, dry out, toughen or crumble; with these tips, each slice will be total perfection!

Similarly, there are a lot of bad habits that can lead to baking fails. To help you on your quest to bake the perfect cake, here's a breakdown of important dos and don'ts:

1. Always grease the pan and line with parchment It's insurance that your cake will slide out cleanly after cooling.

2. Allow the oven to fully preheat first The cakes needs to bake at the right temperature, no shortcuts.

3. Bake in the centre of the oven (unless otherwise specified) If it doesn't specify otherwise, that's how the recipe was designed. Changes will alter your results.

4. Bake in the size of pan specified Otherwise you're looking at uneven baking, which means an uneven cake.

5. Don't try to double the recipe Cake recipes are more complex than that. Source out a recipe for a larger volume instead.

6. Use fresh ingredients Old ingredients taste bad, and old leaveners (like baking soda) simply don't work.

7. No substitutions With the exception of spices, don't substitute ingredients. Especially ones that have structural impact.

🍕Tip #6: Weigh Your Ingredients
I strongly recommend using a kitchen scale when baking. Weighing the ingredients will give you much more consistent results.

🍕Tip #7: Use Room Temperature Ingredients (unless otherwise stated in the recipe)
When a recipe calls for room temperature ingredients, be sure to remove them from the fridge ahead of time.

🍕Tip #8: Choose The Right Ingredients
New bakers might be unaware of the fact that we can’t just randomly pick a pack of flour from the store. There are different types of flours that have different uses. Flour that is meant for bread making for example would make cakes tough (as it has a higher protein content).

🍕Tip #9: Test Your Leaveners
Leavening agents (baking powder and baking soda) are used to help baked goods rise. But they can easily lose their effectiveness if not stored properly. It’s best to test them once in a while, or when in doubt.

🍕Tip #10: Don’t Overmix
When making baked goods where a tender crumb is desirable, such as cookies or cakes, it’s important not to overmix. Overmixing will yield tough products.

These baking tips for beginners are all the tips I wish I knew when I started out! Baking is meant to be fun and relaxing. I’ve compiled here all the baking tips and tricks I could think of, to ensure baking is exactly what it should be: satisfying and delicious!

🍕Tip #1: Get To Know Your Oven Hot spots

Most ovens have hot spots. If you’ve already used your oven a few times, you might have noticed that the cookies (or other baked goods) on one side of the baking sheet brown faster. l

🍕Tip #2: Read The Recipe Before Starting
Even if you’ve baked similar recipes in the past, it’s always best to read all the steps before starting. You don’t want to be caught off-guard during baking!

🍕Tip #3: Follow The Recipe
It’s not enough to simply read the recipe ahead of time. You should actually follow it as well! When a recipe calls for chilling the dough for example, it serves a purpose. Don’t skip it!

🍕Tip #4: No Substitutions On The First Attempt
Try making a recipe as it is written before attempting to change something. It’s best to know what the texture and flavor are supposed to be like before tweaking the recipe in any way.

🍕Tip #5: Prepare Your Ingredients And Baking Tools
Take out all the necessary ingredients and tools before starting, to make sure you have everything. There is nothing more frustrating than to realize halfway through the recipe that you are missing a key ingredient!
Lining them up on the counter will also remind you to actually use them!
