Thoughts on Improving Ourselves and Our Offerings.
At Tommy Le Baker, “improvement” is not a grand, noisy thing. It is not about chasing trends, shouting about new ingredients, or making a fuss for social media. It is quiet. It is daily. It is about the way we look at the tools in our hands, the way we listen to the dough, the way we shape each sandwich filling.
Recently, we decided to improve one of our sandwich recipes. You might think this means: just add a more premium ingredient. But for us, it is more than that — the whole process matters. How the ingredient is treated, how it is prepared, how it tastes on the tongue, how it feels between two slices of our bread.
And so, here are our new toys — humble, simple, but chosen with care. A manual meat grinder, solid and satisfying to use. A pair of good hands, shaping patties one by one, paying attention to the texture. New instructions written for our team — not just to follow steps, but to understand why each step matters.
This is how we grow — not by changing everything, but by going deeper. Deeper into our understanding of what makes something good. Of what makes something enjoyable to eat, and enjoyable to make.
Every day is a conversation with our craft. Some tools stay the same for years. Some get upgraded. Some, like this old-style grinder, come back into our kitchen because it reminds us to slow down and pay attention.
We do this not just for our customers, but for ourselves. To find joy in the work. To let our team enjoy the pride of making something well.
That is what we mean by improving.
