#一分钟弄清梳打粉與泡打粉

#梳打粉(baking soda),是世上最古老的膨胀剂之一,於18世纪由一位法国化学家发明。由於市面上易取得及价格适宜,梳打粉一直被广泛使用。
#梳打粉属碱性,需要加热,或/並且与酸性物质(例如乳酪,柠檬,咖啡等)一同使用,才能发挥较佳效用。
除了令体积增加,梳打粉亦有软化作用,使蛋糕🍰的质地变得易入口;制作曲奇方面,若是做美式软曲奇🍪,梳打粉能加增加曲奇面糊入炉后的流动性,加強表面龟裂的效果。若是做脆身曲奇🍪,加入梳打粉会使脆的质感降低,变得细腻。

而 #泡打粉 又称发粉(baking powder),是发明於十九世纪。相比起梳打粉,泡打粉的好处是在於不一定需与酸性材料一併使用。另外,甜点🧁面糢混合后,可以放置较长时间,亦能保持效用。
#泡打粉 在烘焙加热的过程中会释放出更多的气体,这些气体会使产品达到膨胀及松软的效果。所以做蛋糕🎂用的是泡打粉,蛋糕需要比饼干Cookie更加蓬松柔软。但是过量使用反而会使成品组织粗糙,影响风味甚至外观,因此使用上要注意分量,#泡打粉 在保存时应尽量避免受潮而提早失效果😊。
#泡打粉其实是以梳打粉為基底,再混合酸性物质和粟粉制作以成。粟粉的作用是吸收甜点面糊中的水份,防止产生过早的膨涨作用。
市面上常见或购买到的,是属于 #双效(double acting) 泡打粉,会分两階段释放气体。第一階段是食材跟液体材料混合的时候;而第二階段就是甜点在焗炉加热的时候。
例如做 #玛德莲小蛋糕 时,面糊最好是先静置几小時或过夜,面糊中的水份就能与面粉的筋度充份混合,使质地变得柔软,並且能使各材料的风味充份混合。这情況下,选用泡打粉就会较适合了☑️。
用量方面,我个人做法,通常加入食谱总量约1% 左右。使用时建议先过筛,否则有结块的部份就较难混合到面团/糊當中,以至不能发挥最大效用及影响味道。
❤️转换方面,若然家中沒有了梳打粉,可加入约两倍用量的泡打粉代替使用。

💠💠💠 #泡打粉是化学物质组成的,靠化学反应生成大量二氧化碳来达到起发作用,优点是起发快,受温度湿度影响小,价格低,但毕竟是化学物质组成的, #建议有小孩和孕妇的家庭不要大量使用。

例如海绵蛋糕🍰中,佔约24%,还会加入不同的材料混合,如糖、巧克力、坚果、鸡蛋、油等,这情况下,其实面粉的味道已经和其他材料融合了😊

如果做面包🍞的话,选择面粉就很重要了‼️
很多厂家都在卖所谓的日本粉,要选择一只好的粉必须要了解那粉本身的性质才能拿到好的效果✅
