One day, my daughter came home and said, my teacher wants to see you tomorrow. I went to the school the next morning. She requested a cake without egg as she was a pure vegetarian.

Can you make a chocolate cake… that’s vegetarian?
That was the request I got from my daughter’s teacher that afternoon.

No eggs.
Just a pure vegetarian version of the classic moist chocolate cake.

As a baker i learnt few things and one of them are never rush straight into mixing.

Here’s my non-negotiable checklist:

✨ 1. 𝐖𝐞𝐢𝐠𝐡 𝐚𝐥𝐥 𝐦𝐲 𝐢𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬.
• Eyeballing flour is a trap! Even a few extra grams can mess
with the texture of your cake.
• Use a digital scale — your bakes will thank you.

✨ 2. 𝐏𝐫𝐞𝐩𝐚𝐫𝐞 𝐦𝐲 𝐛𝐚𝐤𝐢𝐧𝐠 𝐭𝐢𝐧𝐬 𝐞𝐚𝐫𝐥𝐢𝐞𝐫.

• 𝐁𝐚𝐤𝐢𝐧𝐠 𝐢𝐬 𝐬𝐜𝐢𝐞𝐧𝐜𝐞, not vibes. When you randomly swap
ingredients or reduce sugar or butter just like that… don’t
be shocked if your cake flops 😬

🍫 Van Houten Cocoa Powder – The LEGEND in Our Kitchen Since Forever!

Van Houten Cocoa Powder was first developed in the Netherlands in 1828 by Coenraad van Houten – the guy who basically invented modern cocoa powder by removing cocoa butter to make it lighter and more mixable. 📚

𝑩𝒖𝒕 𝒘𝒉𝒆𝒏 𝒅𝒊𝒅 𝒊𝒕 𝒆𝒏𝒕𝒆𝒓 𝑴𝒂𝒍𝒂𝒚𝒔𝒊𝒂’𝒔 𝒃𝒂𝒌𝒊𝒏𝒈 𝒔𝒄𝒆𝒏𝒆?
📕Since the 1950s, Van Houten made its way to Malaya through European trade channels and quickly became the go-to cocoa powder in colonial-era bakeries, hotels, and homes.

By the 1970s–90s, Malaysian home bakers were already stocking the iconic orange tin – remember that? It lived rent-free in grandma’s kitchen and saw every kuih, kek batik, and butter cake you ever bit into. 😍

Before viral brownies… before Biscoff… before we knew what “ganache” meant —
There was Van Houten.

That classic orange tin.
The strong, rich cocoa smell.
The way our nenek or mak used to say,
“Kalau nak kek jadi lawa, guna Van Houten, jangan yang murah tu!”

Today, the packaging has evolved, but the name still holds a nostalgic grip on our hearts.

🧁 I still use it in my bakery today - for my chocolate cakes and brownies because some things don’t need to change.
