Fung Wong is one of the oldest pastry bakery in town. Freshly baked char siew sou, egg tarts with very nice vibe 😋❤️💯

As busy as it can get, egg tarts sold out even before tea time.

You might or might not heard of them, if you are a fan of flaky Chinese pastry, time for a trip down to Petaling Street.

Oh I bet they must have adapted to this generation's taste bud. Most of the pastry are really less sweet.

What's your Friday evening activity?🥳
Baking + Cooking is my daily routine in fact.

Can you see this active happy starter? It takes a lot of patience and testing with bread baking. I believe my starter is more mature and active after a month.

Next experiment is to cut short fermentation time by tweaking recipe a little to fit into my schedule (Also me being impatient)

A note to all SD beginner like me, you can try using greater portion of starter in your bake. Benefit of doing this? More stable or succesful fermentation and less sour 🍞

𝗘𝗵 𝗦𝗼𝘂𝗿𝗱𝗼𝘂𝗴𝗵 𝗗𝗶𝘀𝗰𝗮𝗿𝗱 𝗚𝗮𝗿𝗹𝗶𝗰 𝗕𝗿𝗲𝗮𝗱? 𝗦𝗼𝘂𝗻𝗱𝘀 𝘄𝗲𝗶𝗿𝗱......

Basically discard is just flour and water BUT already well developed or well mixed. I have added a great portion of discard into my yeast dough today.

With this addition makes kneading process quicker and easier too from my point of view.

From mixing, kneading, proofing to baking and ready to eat, whole process took me about an hour half or so. Result is amazing too.

Having to feed tends to give you "discard" otherwise your starter will only be fed at wrong ratio or get "diluted"

How not to waste flour through this SD journey? Grow a small portion starter with 5 to 10g feeding and after a week or so you will have enough discard to bake some delicacies

What is the hype about discard? In fact it is flour given enough time to do its work with water in my interpretation. At least with both discard bake - Scones & Brownies, both turn out great and moist on the inside.

Lets not forget I had one miserable - Weak starter and underproof.

So keep feeding!!
