Matilda Chocolate Cake (Ultra Moist)

Ingredients (Cake)

Dry
• 2 cups (250g) all-purpose flour
• 2 cups (400g) sugar
• ¾ cup (75g) unsweetened cocoa powder
• 2 tsp baking soda
• 1 tsp baking powder
• 1 tsp salt

Wet
• 2 large eggs
• 1 cup (240ml) milk
• ½ cup (120ml) vegetable oil
• 2 tsp vanilla extract
• 1 cup (240ml) hot water or hot coffee

Matilda Fudge Frosting
• 1 cup (230g) butter
• 1 cup (200g) sugar
• ¾ cup (75g) cocoa powder
• 1 cup (240ml) evaporated milk or heavy cream
• 200g dark chocolate (optional)
• 1 tsp vanilla
• pinch of salt

Instructions

1. Preheat oven to 170°C / 340°F. Grease and line two 8-inch pans.

2. Mix all dry ingredients in a bowl.

3. Add eggs, milk, oil, and vanilla. Mix till smooth.

4. Add hot water/coffee and mix (batter will be runny).

5. Pour into pans and bake 35–40 minutes. Cool completely.

Frosting
6. Melt butter on low heat.
7. Add sugar and cocoa powder, mix well.
8. Add milk/cream and cook till thick and glossy.
9. Add chocolate, vanilla, and salt. Mix till smooth.

Assembly
10. Slice cake layers flat.
11. Spread frosting between layers.
12. Cover entire cake with frosting.

🍪 Homemade Peanut Cookies (Easy Recipe!)

Crispy outside, melt-in-mouth inside 😍
Perfect for CNY, Raya, or everyday snacking!

✨ Ingredients:
• 200g roasted peanuts (blend)
• 120g sugar
• 120–140ml peanut oil
• 250g plain flour
• 1/4 tsp salt
• 1 egg (egg wash)

👨‍🍳 Steps:

Blend peanuts until fine
Mix peanuts + flour + sugar + salt
Add peanut oil slowly → form dough
Shape into small balls & press lightly
Brush egg wash
Bake at 170°C for 15–20 mins

🔥 Tips:
✔ More oil = softer texture
✔ More flour = firmer shape
✔ Don’t overbake!

💡 Using peanut oil makes cookies more fragrant & less greasy 👍

Date & Walnut Cake

🧾 Ingredients

• 100 g seedless dates
• ½ cup water
• 150 g all-purpose flour (maida)
• 1 tsp baking powder
• 150 g butter, softened
• 150 g caster sugar
• 3 eggs
• 75 g walnuts, chopped
• 1 tsp vanilla essence

👩‍🍳 Instructions

1. Chop the dates and cook with ½ cup water for 1 minute, then cool slightly.

2. Blend into a smooth paste.

3. Sift flour and baking powder together.

4. Beat butter and sugar until light and fluffy.

5. Add eggs one by one, mixing well each time.

6. Add dry ingredients and mix gently.

7. Fold in the date paste.

8. Add walnuts and vanilla, fold lightly.

9. Pour into a greased 8-inch tin.

10. Bake at 170°C for 55–60 minutes until a skewer comes out clean.

11. Cool for 10–15 minutes, then transfer to a rack.

Instructions

3. Add caramel layer, then remaining batter.

Black Cocoa Loaf Cake

Ingredients:

• 1 cup all-purpose flour
• ½ cup black cocoa powder
• 1 tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt

• ½ cup unsalted butter (softened)
• 1 cup granulated sugar
• 2 large eggs
• 1 tsp vanilla extract
• ½ cup sour cream
• ¼ cup whole milk
• ¼ cup hot water

For Ganache Glaze

• ½ cup heavy cream
• 100 g dark or semi-sweet chocolate (chopped)
• ½ tsp vanilla extract (optional)

Instructions

1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.

2. Sift together flour, cocoa powder, baking powder, baking soda, and salt.

3. Beat butter and sugar until light and fluffy.

4. Add eggs one at a time, then mix in vanilla, sour cream, and milk.

5. Add dry ingredients gradually and mix gently.

6. Stir in hot water to make a smooth batter.

7. Pour into pan and bake for 45–55 minutes.

8. Cool completely.

9. Heat cream until just simmering.

10. Pour over chocolate, rest 1 minute, then stir smooth.

11. Let ganache cool slightly.

12. Pour over cake, let set, slice, and serve.
