Matilda Chocolate Cake (Ultra Moist)
Ingredients (Cake)
Dry
• 2 cups (250g) all-purpose flour
• 2 cups (400g) sugar
• ¾ cup (75g) unsweetened cocoa powder
• 2 tsp baking soda
• 1 tsp baking powder
• 1 tsp salt
Wet
• 2 large eggs
• 1 cup (240ml) milk
• ½ cup (120ml) vegetable oil
• 2 tsp vanilla extract
• 1 cup (240ml) hot water or hot coffee
Matilda Fudge Frosting
• 1 cup (230g) butter
• 1 cup (200g) sugar
• ¾ cup (75g) cocoa powder
• 1 cup (240ml) evaporated milk or heavy cream
• 200g dark chocolate (optional)
• 1 tsp vanilla
• pinch of salt

Instructions
1. Preheat oven to 170°C / 340°F. Grease and line two 8-inch pans.
2. Mix all dry ingredients in a bowl.
3. Add eggs, milk, oil, and vanilla. Mix till smooth.
4. Add hot water/coffee and mix (batter will be runny).
5. Pour into pans and bake 35–40 minutes. Cool completely.
Frosting
6. Melt butter on low heat.
7. Add sugar and cocoa powder, mix well.
8. Add milk/cream and cook till thick and glossy.
9. Add chocolate, vanilla, and salt. Mix till smooth.
Assembly
10. Slice cake layers flat.
11. Spread frosting between layers.
12. Cover entire cake with frosting.
