Could apple muffins get any better? With Golden Churn butter, they can, as the natural goodness of our butter gives it a stronger flavour. Here's how you can incorporate it into a good ol' apple muffin recipe:
Ingredients (makes 18-24 muffins):
1 3⁄4 cups unbleached flour or 1 3⁄4 cups all-purpose flour
1 1⁄2 tsps baking powder
1 tsp baking soda
1⁄4 tsp salt
1⁄2 cup Golden Churn butter, softened
1 cup sugar
1 egg
1 cup apple butter (homemade if available)
1 tsp vanilla
2 Tbsp lemon juice
1 can evaporated milk
sugar, to sprinkle
Steps:
1. In a small mixing bowl stir together the flour, baking powder, baking soda and salt; set aside.
2. In a large mixing bowl cream the Golden Churn butter and sugar until fluffy.
3.Add the egg to the sugar mixture; beat well.
4. Beat in the apple butter and vanilla.
5. Stir lemon juice into the evaporated milk.
6. Beating at low speed, alternately add the flour and the milk mixtures to the apple butter mixture until just combined.
7. The less you mix the more tender the crumb.
8. Grease or line with baking papers for anywhere between 18 to 24 muffin cups.
9. Fill each cup 2/3 full.
10. Sprinkle lightly with sugar.
11. Bake at 180°C for 20-25 minutes.
12. Cool on wire racks.
