🥧苹果塔 Apple Tart 短视频教学~
食谱来自 蒸美味Flour Garden
① 九寸甜塔皮 (9-inch / 23cm)Sweet Pastry
* 80g 无盐牛油 Unsalted Butter
* 40g 糖粉 Icing Sugar
* 33g 全蛋 Whole Egg
* 160g 中筋面粉 All-purpose Flour
* 20g 杏仁粉 Almond Flour
* 1g 盐 Salt
* 少许 香草精 Vanilla Extract

② 杏仁奶油 Almond Cream
* 28g 无盐牛油(软化) Unsalted Butter (softened)
* 28g 糖粉 Icing Sugar
* 28g 杏仁粉 Almond Flour
* 25g 全蛋 Whole Egg
* 3g 兰姆酒 Rum
*少许盐 Pinch of Salt

③ 苹果馅 Apple Filling
* 3–4颗 青苹果(Granny Smith apple)
* 25g 牛油 Butter
* 50g 细砂糖 Sugar
* 少许 柠檬汁 Lemon Juice
* 少许 肉桂粉 Cinnamon (optional)

④ 表面装饰苹果 Sliced Apple Topping
* 3颗 红苹果(切薄片1–2mm) Red Apple (thinly sliced 1–2mm)
* 少许 柠檬水 Lemon Water (prevent oxidation)

🧑🍳Method/做法:
1. 塔皮擀至3mm厚度,以160°C 烘烤 10分钟。
Bake tart shell at 160°C for 10 minutes (blind bake)
2. 出炉刷蛋液, 再烘烤 5分钟。
Brush with egg wash.
Bake again for 5 minutes.
3. 把杏仁奶油挤入塔壳。160°C 烘烤 10分钟。
Pipe almond cream into tart shell.
Bake at 160°C for 10 minutes.
4. 加入炒好的苹果馅。160°C 烤 15–20分钟。
Add pre-cooked apple filling.
Bake at 160°C for 15–20 minutes.
5. 排上苹果片, 刷一层融化牛油。160°C 烘烤 5分钟。
Arrange sliced apples on top, brush with melted butter.
Bake at 160°C for 5 minutes.
6. 出炉后刷杏桃果胶。
Brush with apricot glaze after baking.
