The Secret History of Ma Lai Go π°β¨
Did you know that the famous Cantonese Ma Lai Go (马ζη³) actually started its journey right here in the Malay Peninsula? π²πΎ
Back in the British Malaya days, English settlers missed their baked sponge cakes. But there was a problem, early Malaysian kitchens didnβt have western ovens or fresh dairy milk.
Enter the ingenious local cooks and early Chinese immigrants. π¨βπ³ They watched how the native Malays used steaming for their traditional kuih and swapped dairy for rich coconut milk and fragrant pandan leaves. πΏ
Inspired by the dark, porous texture of Malay favorites like Apam Kampung and Apam Gula Hangus, they created a "steamed sponge." When Chinese immigrants traveled back to Hong Kong and Guangdong, they took this "Malay Cake" with them. Cantonese chefs later refined it with evaporated milk, but kept the name "Ma Lai" meaning Malay to honor its Malaysian roots. πβ€οΈ
