Ricotta fritters (or mini pancakes) recipe:

As a pastry chef, it’s not a surprise at home we like good food. We hardly eat outside now, especially since we changed our whole way of eating and living (proud pescatarians now). But of course with our stressful lifestyle, we hardly get to pamper ourselves.
So cyclones are actually the best time to disconnect from daily reality and just be with family since we’re confined at home. Especially when stuck for a few days like what we just had with cyclone “Garance”.

The following mini pancakes or fritters are the first of a variety of delicious (and easy) Cyclone treats to be published in the future – Ricotta fritters (or Ricotta mini pancakes). Do not let their name fool you: they can totally go as a kind of pancakes for a sweet breakfast or a weekend brunch. You can definitely enjoy them throughout the year and not just on cyclonic days.

The preparation requires only one bowl and only takes few minutes. As soon as these are out of the pan, they are delicious warm and fresh with some powdered sugar and maple syrup. And the best? It's a great (and delicious) activity to do with the kids .

For the fritters:
o 250 grams ricotta cheese
o 70 grams (3/4 cup) sugar
o 1 large egg
o 1 tsp. vanilla extract
o Pinch of salt
o 50 grams (5 tbsp.) all-purpose flour

For serving:
o sugar powder
o maple or chocolate syrup
o Crème Chantilly or sour cream

Preparation:
1. In a bowl, mix together cheese, sugar, eggs, vanilla, salt and flour until a uniform mixture is obtained.
2. Heat oil in a pan and fry in small pancakes until golden on both sides.
3. Very important tip – do not make them big fritters when frying. Use as a measuring tool a tablespoon. You will not be able to “flip” them when frying if they are too big and they will look like a scrambled egg.
4. Transfer to a serving plate.
5. Sprinkle with powdered sugar and serve hot with maple syrup and / or chocolate syrup or any nice topping you love (we love sour cream and blueberries)
o The fritters are best when hot and fresh, but can be kept in a closed container in the refrigerator for up to two days. It is recommended to reheat a little before serving.
o Instead of ricotta cheese, you can use the same amount of Greek yogurt instead (but only very thick Greek yogurt)
o Gluten-free version: Use gluten free flour mix in the same amount instead of all-purpose flour.

Our Story

Candy et Guy Cuisine Gourmet - qui sommes-nous? Nous sommes un couple et une compagnie jeune et énergique de take-away et service traiteur situé à Beau Bassin. Nous sommes récemment rentrés à Maurice après plusieurs années passées à l’étranger. Là-bas Candy travaillait dans une très importante entreprise pharmaceutique multinationale et Guy faisait sa carrière dans une compagnie high-tech très importante. Quoiqu’on y jouissait des conditions de travail superbes, en même temps on a été attiré à la cuisine et pâtisserie professionnelle. Tous les deux nous avons suivi les cours professionnels: la Cuisine pour Guy et Pâtisserie et Boulangerie pour Candy. On aime cuisiner à tel point que Guy a changé sa carrière high-tech contre le stage suivi de travail de chef aux restaurants et hôtels de haute classe. Candy tout en continuant à être employée par la firme pharmaceutique, continuait à se perfectionner dans le domaine qu’elle préfère : pâtisserie, confiserie et boulangerie. Depuis notre mariage et lune de miel à Maurice il y a quelques années, Guy est tombé amoureux de notre île, tandis que Candy a redécouvert son pays natal. Et voilà que nous sommes là, à Curepipe, impatients de commencer à employer nos connaissances et talents culinaires au service des Mauriciens. C’est notre plaisir et notre but que d’amener les plats internationaux et en particulier la cuisine méditerranéenne et pâtisserie européenne de haute qualité au goût Mauricien. Candy et Guy Cuisine Gourmet propose le service-traiteur pour plats de haut de gamme fraîchement cuisinés sans être congelés, pâtisserie Française et produits de boulangerie. Nous n’utilisons que les ingrédients frais de première qualité. Nos prix sont abordables pour la qualité supérieure de nos plats et produits dont le choix est riche et varié. Nous offrons aussi un service de livraison partout surt l'ile.
