Chocolate banana biscuit cupcakes
Chocolate Banana Biscuit Cup Cakes
Servings: 6 cupcakes

Bake Time: 18 minutes
Ingredients
1 ripe banana (mashed)
6 tbsp yoghurt
8 crushed biscuits (finely ground, about 1/2 cup)
3 tbsp melted chocolate
1 tbsp coffee (optional, dissolved in 1 tsp hot water)
Half teaspoon Vanilla Essence
Half tsp baking powder
Half tsp baking soda
1 tbsp Vegetable oil
A pinch of salt
Nuts or dates (optional, chopped, for mix-in or topping)

Instructions
1. Preheat oven: Preheat to 180Β°C (350Β°F). Grease and line a small cake pan or an oven-safe dish.
2. Make the batter:
Mash the banana in a bowl.
Add yoghurt, melted chocolate, coffee, and oil . Mix well.
Stir in the crushed biscuits, baking powder, baking soda and salt until smooth.
Fold in nuts or dates if desired or on top of cupcakes
3. Bake:
Pour the batter into the prepared cup cake liners.
Bake for 18 minutes, or until a toothpick inserted in the center comes out clean.
4. Cool and garnish:
Let them cool slightly. Drizzle with melted chocolate if desired.
