2020 has been a crazy year for all of us where we needed to get used to the ‘new normal’. My time inside has been spent mostly on baking and cooking new recipes and especially ones from other cultures for my family.

I’d like to dedicate this recipe post to Palestinian cuisine and celebrate the amazing middle eastern flavors I’ve been introduced to after learning more about this intriguing country. PM for recipe method!

Mandarin Orange Blossom Cake

Ingredients:
5 mandarin oranges
150g caster sugar
180ml light olive oil
5 large eggs
320g fine semolina
4 tsps baking powder

Syrup:
150g caster sugar
2tbsp freshly squeezed lemon juice
2 tsp orange blossom water
180ml water
