How about a bite of these yummy brownies?
Baking and trying out new recipes has become my kind of meditation since the start of this pandemic which has really helped ease my week. This is a new brownie recipe that I tried out, and safe to say I’m in love with it!
Ingredients:
* 200g of cooking chocolate chopped to small pieces (I went for )
* 125g of unsalted butter (I used salted butter for this since I couldn’t get hold of unsalted butter. Just keep in mind that if you use salted butter, you can skip adding salt)
* 1/4 teaspoon of salt
* 1 1/2 cups of granulated sugar (brown sugar was used for this)
* 3 medium sized eggs
* 1/2 cup of all purpose flour
* 1/4 cup of cocoa powder
* 1 teaspoon of Vanilla essence
* Cashew and chocolate chips per your liking to mix in to the batter and to decorate the top
Steps:
1. Melt the chocolate together with the butter until it’s all mixed well. You can do this by putting the chopped chocolate + butter in the microwave for 30-45 seconds, take it out and stir well. Repeat until its well mixed. Alternatively, place the bowl with butter and chocolate in a hot water bath while stirring it continuously.
2. In a separate bowl, mix the sugar and eggs well. When mixing, add eggs one by one, and make sure each egg is mixed well with the sugar before adding the next.
3. Add vanilla, chocolate + butter mixture and mix well.
4. Sift the flour and cocoa powder together in to the batter and fold in until it created a creamy batter.
5. Preheat the oven to 185 Celsius.
6. Prepare a pan with parchment paper lining and butter,
7. Mix the cashew and chocolate chips in to the batter, and then pour the brownie batter on to the pan. Don’t forget to gently shake the pan to even out the batter to the same level before putting it in the oven to bake.
8. Bake the brownie for 20 - 30 mins. You can check if the brownies is baked well by inserting a toothpick to the center of the brownie - if it comes out dry with some crumbs, your brownie is done!
