Who needs gluten-free products and why?

People affected by the Celiac disease cannot consume food containing any amount of gluten. There are also those who have trouble digesting gluten and are considered gluten-intolerant or are sensitive to gluten foods. Individuals with autism spectrum disorders (ASD) may exhibit low tolerance or allergies to certain foods or chemicals. While not a specific cause of autism, these food intolerances or allergies may contribute to behavioural issues. Research has shown an autistic child may benefit from the removal of gluten and casein from their diet.

2. Are all products gluten-free and casein-free?

Everything we sell is gluten-free. Nothing that we sell or make in our bakery contains gluten. All bakery products do not contain any casein (milk or milk products).

3. What makes our products gluten-free?

Gluten and gluten-like proteins are found in wheat and other grains, including oats, rye, barley, bulgur, durum, kamut and spelt, and foods made from those grains. They are also found in food starches, semolina, couscous, malt, some vinegars, soy sauce, teriyaki sauce, flavourings, artificial colours and hydrolysed vegetable proteins.

None of our products contain gluten. Our recipes use our own special blend of flours that are made from rice, potatoes, sorghum, tapioca and other gluten-free grains and cereals.

4. What is Coeliac disease?

Coeliac disease (pronounced see-liac, spelt celiac disease in other countries) is an autoimmune disease. Gluten, which is found in wheat, barley and rye triggers an immune reaction in people with coeliac disease. This means that eating gluten damages the lining of the small intestine. Other parts of the body may be affected.

5. What is Casein?

Casein is a protein found in milk and foods containing milk, such as cheese, cream, butter, yogurt, ice cream, whey and even some brands of margarine. It also may be added to non-milk products such as soy cheese and hot dogs in the form of caseinate.

6. Why do people need casein-free foods?

Individuals that are lactose intolerant cannot have dairy products. Also, people with autism spectrum disorders (ASD) may exhibit low tolerance or allergies to certain foods or chemicals. While not a specific cause of autism, these food intolerances or allergies may contribute to behavioural issues. Many parents and professionals have reported significant changes when gluten and casein are eliminated from the child’s diet.

7. What is lactose intolerance?

Lactose intolerance is the inability to digest lactose, a sugar , found in milk and milk products.

All our products contain eggs unless stated otherwise.

9. Why are our products more expensive than those made from wheat?

The cost and list of ingredients used in the production process are often more than those used to make similar wheat products. For example, gluten-free flours do not have the natural binder, gluten, so Xanthan and Guar gums are often used to duplicate the traditional texture of wheat dough and batter. Eggs as well as other ingredients are also commonly used with this aim.
