BIRTHDAY CAKE COOKIE DOUGH RECIPE
Good evening all. I haven't been well but now that I am up with my both feet, I am privileged to share with you this amazing cookie dough, just special for your birthday treat or any other important occasion. Well, let's kick things off.

First here's a list of what you need:

-1¾ cups all-purpose flour
-½ cup (1 stick) salted butter softened
-¾ cup granulated white sugar
-⅓ cup light brown sugar
-½ cup half and half(substitute: combine ¼ cup milk and ¼ cup heavy cream)
-½ cup white chocolate chips
-3 tbsp rainbow sprinkles

INSTRUCTIONS

• Preheat the oven to 350 degrees Fahrenheit and line a sheet pan with parchment paper.
• Sprinkle the flour over the entire sheet pan and then bake in the oven for 5-7 minutes to heat treat it and kill the bacteria. Do not overcook the flour or it will take on a burnt taste.
• Take the flour out of the oven and set it aside to let cool to room temperature, about 15 minutes.
In a large bowl with a hand or stand mixer, beat the salted butter, white sugar, and light brown sugar together until completely combined and creamy, about 1 minute.
• Add in the cooled, heat-treated flour, and the half and half. Beat until completely combined, about 1 more minute.
• Gently fold in the white chocolate chips and rainbow sprinkles.
• Place in the refrigerator to cool for 2 hours before enjoying.

It is important to note:
-To Store: Store your cookie dough in the refrigerator in an airtight container for up to 5 days.
-To Freeze: Wrap this cookie dough in plastic wrap before placing in the freezer and freeze for up to 3 months.

Tips:
-Since this cookie dough does not contain any leavening ingredients, it is not recommended to bake into cookies.
-You can add a bit more flour if the dough is too soft or sticky, or add more milk if the dough is too stiff.
-To make this even faster, you can bake the flour ahead of time. Then when you are ready to enjoy your edible cookie dough, just combine the ingredients.
-Make sure that your butter is at room temperature to properly cream with the sugar.
-The reason the flour is heat treated is to kill bacteria and pathogens that can find its home in the raw flour.

Classic Pizza Dough Recipe

Longing to make that pizza at home? No one has the power to control cravings. It's 10pm and well, wouldn't it be nice if you had a well reserved pizza dough for a quick fill up? About the toppings, it's all your choice.

Ingredients
8 Cups All-purpose Flour
12grams Kosher Salt
2½Teaspoons (10g) Active Dry Yeast
2⅔ Cups(630ml) Lukewarm Water
1 Tablespoon(15ml) Olive Oil

Yields: 3 Classic Pizzas

Instructions:
• Whisk together the flour, salt, and yeast in a large mixing bowl or the work bowl of a stand mixer. Pour in the water and olive oil. Stir together with a sturdy spoon until a shaggy dough forms. Knead with floured hands or by stand mixer for 10 minutes on medium or until the dough is smooth, elastic and stretchy.
• Return the dough to the bowl. Cover the bowl with a clean shower cap, plastic wrap or a damp tea towel and let it rise in a warm, draft-free place for 1-2 hours., or until approximately doubled in size and puffy.
• Divide the dough into your desired sizes. Use your hands to roll each piece of dough into a tight ball and allow it to rise for 20 more minutes before baking.

• This dough can be stored in the refrigerator for up to 6 days or in the freezer for up to 3 months before using.
• To store: label a zipper-top freezer bag with the size of the pizza. (Use one bag per round of dough you wish to use later.) Drizzle 2 teaspoons of olive oil in each bag, rub around with your hands to make sure the inside is well coated, and insert one dough ball into each prepared bag.
• To use refrigerated dough: place the dough in its bag on the kitchen counter and allow it to come to room temperature and rise for an hour before you want to use it and bake it.
• To use frozen dough: transfer the bag of dough to the refrigerator the day before you plan to use it, then onto the counter to come to room temperature and hour before you wish to bake it.

When making a Pizza 🍕 how long do I cook it?
1. Sheet Pan Pizza - Bake in a preheated oven at a temperature of 425°F for 25-30mins until the crust turns golden brown on the edges
2. 12-inch(30cm) or 10-inch(25cm) round Pizzas - Bake in a preheated oven at a temperature of 425°F for a period of 20-25 minutes until the crust is golden around the edges.

Having a hard time over a whipping cream for that homemade cake? Well, wander no more! Say no to whipping migraines 😉

Here's what you need:
- A whisk
- Cold Whipping Cream
- Confectioners' Sugar(popularly known as Icing sugar)/ or use the normal granulated sugar
- Vanilla Extract/Essence

For a yield of 2 Cups of Whipping Cream use the following measurements

• 1 cup(240ml) Cold Whipping Cream
• 2 Tablespoons Confectioner's/Icing Sugar
• ½Teaspoon Vanilla Extract/Essence

Instructions
• In a chilled non-plastic(metal or glass) bowl combine the above ingredients and using a hand whisk(if you have an electric hand mixer it'll take a shorter time), whip the cream until medium peaks form for about 3-4 minutes if using electric mixer but if using a hand whisk it will take a while about 12-15 mins and use it immediately or you can chill it in a freezer for upto 24 hours

Kindly note: If you haven't made whipping cream before, use that technique you use to beat(kukoroga) eggs - in circles; Except this time round you will be using a hand whisk to obtain the best whipping cream. After it's ready you can use a piping bag if you are looking to achieve specific decoration shapes otherwise use cake knife to apply it on and around the cake.

Blueberry Muffins

Ingredients

2 cups + 2 tablespoons all purpose flour reserve 2 tablespoons

2 teaspoons baking powder

1/2 teaspoon salt

3/4 cup sugar

2 eggs

1 cup milk

4 tablespoon butter melted

1 teaspoon vanilla

1/4 cup vegetable oil

1 teaspoon lemon zest

1 1/2 cups fresh blueberries



Instructions

Preheat oven to 425 degrees.

In a small bowl add 2 tablespoons of flour to blueberries. Set aside.

Combine all dry ingredients in a large bowl. Make a well in center of mixture.

Whisk eggs, milk, butter, vanilla and lemon zest in a separate bowl. Add to dry ingredients- don't over mix (you should have lumps).

Fold in the blueberries to the batter carefully.

Pour batter into greased muffin pan two-thirds full.

Bake for 17-19 minutes or until golden brown and toothpick inserted comes out clean. Cool in tin for 5 minutes
