季節の上生菓子 seasonal jyo-namagashi(non-baked fresh confectionery)

There are many kinds such as nerikiri, kinton, and nagashi-mono.
We make each of them by hand, which symbolizes the flower of the season.
※There are season limited confections as well.

Sweet white bean paste is filled in the place where the seed of the sweet sour blue Japanese plum was. The plums are boiled with sweet syrup, and the outer part of this confection is a Momoyama dough (a dough for Japanese confectionery made with ingredients such as white bean paste and egg yolks)

三笠山(Mikasa-yama)

Mikasa-yama is a confection which our first shopkeeper created in the mid Meiji period. It is a baked confection with a thin layer of dough around the Uguisu-an (a green smooth bean paste made by crushing boiled green peas and sweetening with sugar or honey). The contrast of the outer brown and the inner bright green is beautiful. It was named Mikasayama because the ninth generation Danjyuro Ichikawa (a kabuki actor) said this confection looks like the view of the mountain firing of the Mikasa Mountain(“yama” means “mountain” in Japanese) in Nara.
