This birthday cake was a bold adventure with one of my faithful customers — blending rich chocolate and pistachio inspiration from the viral Dubai Chocolate Bar into a gluten-free, dairy-free masterpiece. After working out the kinks, we’ve perfected it and it’s now ready for the market! 🎂🍫

Cleaning steps:
1. After taking time to select the fruit in best condition at the supermarket, take them home and asap rinse fruit under running water
2. In a large enough bowl, put cool, clean water; add a third more that volume in vinegar (I use cane vinegar); & baking SODA (1 tsp per 2 cups water.
3. Soak for 12 minutes ONLY to avoid damage
4. Rinse again briefly under rubbing water
5. Gently lay them spread out on a kitchen towel to dry. flipping them once one side dries.
6. Place a sheet or two of paper towel at the bottom of the air tight container (ideally airtight talk glass jar) to catch condensation. The gently place fruit in bottle (firmer ones on the bottom, if possible)

Troubleshooting: If you see beads of water inside the bottle, either the fruit weren't fully dry. Fix by opening bottle inside the fridge for a while.

Layers of espresso-soaked ladyfingers and velvety whipped cream mascarpone make every bite indulgent yet airy. Instead of the traditional smooth top, we’ve piped delicate stars and finished them with the traditional dusting of cocoa powder for a touch of flair. The perfect treat to beat the heat while savoring classic Italian elegance.

This 6" two‑layer gluten‑free pistachio white chocolate chip cake was worth the wait — we sourced premium pistachios to ensure the finest flavor. Filled with pistachio butter and finished with silky white chocolate buttercream, it’s a balance of nutty richness and sweet indulgence.

Because this customer loves frosting, we designed a generous buttercream finish: rows of ombré green roses that make the cake as stunning as it is delicious.
