Made these gorgeous Craquelin au Choux for a few weeks back for their brunch event.

A nice choux pastry filled with Toasted Hazelnut Pastry Cream and a house made Hazelnut Praline, topped off with Salted Caramel and a Caramelized White Chocolate Namelaka!

Dark Dreams

Happy new year to our little oven family!.

For the first day of the new year, I present to you Dark dreams Entremet.

An entremet is a kind of frozen french pastry with different flavour layers inside.

Dark dreams consists of

- Moist dark chocolate and almond cake.
-Salted caramel
- Belgian Dark Chocolate custard
- Almond crumble with hazelnuts and sea salt.
- Super creamy Chocolate mousse

All encased with a dark chocolate glaze, some hazelnuts and other garnishes.

This entremet brings all your dark chocolate dreams to life!

This is a Chocolate sponge with a rich and creamy Ganache topped off with some light and fluffy Italian Buttercream.

This was my first time carving shapes in cake and wow, just wow. It was so exciting! Made this beautiful cake for the 3rd birthday of the surfer baby, Callum!
