Plain Sourdough.

50-50 Atta and Maida flours
65% Hydration
2% Salt
42% Starter (22hr ferment in fridge)

30 min knead
3.5 hr bulk ferment
5 min bench rest
12 hr final proof, overnight, in fridge

25 min bake with cover @240°C
30 min bake without cover @230°C
