I almost turned back.

Almost.

Instead, I walked in, found the manager, gave my sample box to him and said, "Just taste these." Then I left. Not knowing if I'd hear back. A few days later, they called. I sat across from their head chef, and she said, "These are the best brownies I've ever tasted. I can't believe they're made of ragi."

I've been baking brownies for 15 years. That moment made every single one of them worth it.

Some cakes don't arrive with fanfare.

They sit quietly on the counter, golden and unassuming. You cut into them and the crumb is soft, almost cloud-like, with little dark pools where the chocolate melted in during baking. You take a slice. You don't put it down.

This is what I've been working on, a classic vanilla butter cake with dark couverture chocolate buttons baked into every slice. No frosting. No layers. No occasion required.
