Apply Jelly with fresh fruits

The first plated dessert i learnt at LCB. Many components here:
• Gelée de pomme (Apple Jelly) with fresh strawberries, grapes and orange segments
• Pâte sucrée (sweet paste) broken into shards and crumble for a contrast in texture
• Quenelle of whipped cream to add a creamy element to the dessert and cut some of the overall sweetness
So refreshing and summery!

This is one of my favourite pastries, take practice to get the consistency right but really delicious as it makes a great base for any decadent fillings.

It's been a pleasure serving you!

This may come as a surprise to many but i have been planning the next chapter in my life for a while now. In that planning, life has given me an opportunity to take up further studies in Australia.

The last two years have been an absolute delight. None of this would have been possible without the love and support y'all have given me, that too amidst a worldwide pandemic. Thank you for thoroughly enjoying my creations. It has filled me up with immeasurable gratitude.

Having said this, i will be accepting a few final orders till Monday 12/9/22 for delivery next week. Through this page i will continue to document my journey as a chef and would love for y'all to be a part of it. To new beginnings🥂
