Everything in this frame is edible … the pears , the flowers and the tray in which the pears are kept, everything ! … the pears are individual dessert cakes with a centre of ginger , lemon and pear compote , encased in a vanilla bean white chocolate mousse with a thin base of limoncello soaked white sponge … all covered in a white chocolate coating to mimic real pears… the cardboard like tray is made entirely with chocolate and the flowers are real edible flowers …Made this for a friends birthday yesterday , carried it as delicately as possible and almost in one shape over a distance of two hours and gifted it to her …. And then she calls it Peaches !! 🙄😶😐🤦🏻‍♀️👊🏻 … “lekin abhi dost mana hai toh dosti nibhani bhi padegi ! “🤷🏻‍♀️

Another hot selling flavour combo is Coffee-Hazelnut-Chocolate … a biscuit sponge with hazelnuts, soaked with liqueur spiked espresso, filled with milk chocolate cremeux, and frosted with dark chocolate ganache … this one is topped with a dark chocolate (almost) mirror glaze and decorated with a dark chocolate collar , white chocolate flowers and chocolate crisp pearls ….. god knows how many times I typed chocolate 😬 but there’s no such thing as too much chocolate !! 🤷🏻‍♀️

I’m getting a lot of Pineapple flavour requests these days … here’s one of them I enjoyed making … an entremet with layers of Limoncello soaked sponge , pineapple cremeux , chunky pineapple compote and airy coconut mousse .. decorated with white chocolate collar , piped chocolate flower , lemon zest , freeze dried raspberry bits and 24k edible gold leaf …… and when the client feedback says “people just closed their eyes every-time they ate a spoonful “ … it’s all worth the effort😅

First Mango Tres Leches of the season ... A chiffon sponge soaked with a rum spiked three milk mixture overnight (condensed milk, evaporated milk and cream) and filled with dairy whipped cream and fresh mangoes... decorated with fresh mango slices, blueberries, freeze dried rapsberry bits, pistachio slivers and a white chocolate collar...

Yet another upgrading of leftovers.... extra chocolate mousse from one order encasing coffee creme brûlée centres made with some leftover creme patisserie on a base of coffee liqueur soaked leftover sponge cut outs ... decorated with some chocolate to look like swans .... all this to celebrate 17 years of tolerance 😜....

One gentleman ordered these pebbles for his first wedding anniversary saying his wife asked for some rocks as an anniversary present.... let us hope and pray that he is safe !!🙏🏻😜🙏🏻... and that he got to enjoy these pebble shaped cakes with layers of pistachio sponge, raspberry gelée , pistachio creme brûlée and dark chocolate mousse with coloured cocoa butter coating and some chocolate leaves....

All you need is Love... but a little chocolate (in any form ) now and then doesn’t hurt ....Happy Valentine’s Day everyone 💕..... and here’s the Black Forest cake in a slightly different avatar , with layers of dark sinful chocolate cake soaked with chocolate liqueur alternating with different layers namely sour cherry gelée , vanilla ganache montée , dark chocolate cremeux and dark chocolate ganache decorated with some handmade dark chocolate garnishes and chocolate crisp pearls ....Ab hua pyaar ??

I was entrusted with the task of making a cake for a mehendi ceremony by a very dear friend ..... hoping i lived up to her expectations 😅.........
The two tiered cake comprises of two different flavours , the bottom is a vanilla buttermilk cake soaked with some Cointreau , filled with bitter orange marmalade and frosted with vanilla buttercream & the top tier is a chocolate cake soaked with kirsch filled with sour cherry compote and frosted with dark chocolate ganache. The cake is finished off with a white cocoa butter spray with some Pearl sheen and embellished with a handmade white chocolate flower and some henna designs....

I recently bought a bottle of elderflower syrup and have been using it extensively in lemonades , cocktails , teas even and of course desserts ... one such experiment was this Tart - a Pâte sablée base, with a cheesecake filling topped with lemon curd and a white chocolate & elderflower cremeux dome, decorated with fresh berries and edible flowers ... the elderflower adds a sweet floral highlight to the lemony creamy cheesecake tart and the berries complete the look and taste both! Pretty happy with this one😎

Starting the new year on a Chocolatey note... with a decadent date , pecan and chocolate cake topped with a honey whiskey infused chocolate cremeux ... I already feel positive about 2021.... or is it the effect of those antioxidants and the whiskey??!! 🤔😜

One thing I make every winter is Strawberry shortcake ... though I always prefer eating the fresh berries just like that , I also like to use them in simple recipes that highlight the fruit itself ... and I absolutely detest fresh strawberries baked into a cake batter ..... the berries turn into a weird greyish colour and lose all their flavour ... plus the cake turns out horribly dense and mushy.... This year too I made the shortcake but with a slight twist .... here’s my Strawberry and pistachio shortcake with layers of Pistachio biscuit , Crème Chantilly and fresh strawberry slices decorated with pistachio powder, fresh berries and edible flowers from Trikaya Agriculture Pvt Ltd.
These strawberries from Pune are one of the best I’ve had in a long time, tart and sweet and super juicy ...harvested after you place the order and delivered within a few hours, you can feel the freshness....
