Chocolate Cake Eggless

1 ½ cup All purpose flour (maida)
3 tablespoons Unsweetened cocoa powder
1 ½ teaspoons Baking powder
¾ teaspoon Baking soda
1 cup Sweetened Condensed milk
¾ cup Unsalted Butter melted and cooled
1 ½ teaspoons Pure Vanilla extract
¾ cup Water

Instructions
Preparation:
Preheat the oven to 350 degrees F or 180 degrees C for at least 10 minutes.
Melt the butter on the stovetop. Do not let it boil. heat the butter till it is just melted. Let it cool down to room temperature.
Now prepare the 9 inch round cake pan. Brush the bottom and sides of the pan using melted butter and keep it aside.
Making Eggless Chocolate cake recipe:
Take dry ingredients (all purpose flour, cocoa powder, baking powder, and baking sodin a bowl. Mix well using a wire whisk. Keep it aside.
Add water, condensed milk and vanilla extract to the melted, cooled butter. Whisk well till everything is incorporated well.
Now sift the half of the flour mixture into the wet mixture. Whisk it till incorporated.
Now sift the remaining flour mixture. Again mix it. Halfway through switch to the spatula. And stir till it is just combined, do not overmix.
Pour the batter into the prepared cake pan. Lightly tap it on the countertop. So batter will spread out evenly and if there are any air bubbles, it will also get removed.
Bake into the preheated oven for 30 minutes.
Check the cake by inserting a toothpick in the center of the cake. If it comes out clean that means cake it ready.
Remove it from the oven and put on the wire rack. Let it cool down for 10 minutes in the pan itself.
Then Invert the cake upside down to the cooling rack. Let the cake cool down completely on wire rack.

Chocolate Ganache Frosting :

Ingredients
150gms Milk chocolate
2 tablespoons butter
200ml heavy cream

Instructions
Place chocolate and butter in a large bowl.
Heat the heavy cream either on the stove until almost boiling.
Pour the heated cream over the chocolate and butter. Allow to sit for 5 minutes without stirring.

Whisk until completely smooth and shiny.
Cool to room temperature (this may take about an hour, but you can leave it at room temperature for longer).
Whip the ganache with a mixer until light and fluffy.
Spread or pipe onto cooled cake or cupcakes.

Eggless Whole Wheat Banana Chocolate Cake

Ingredients: 👇🏻

Whole Wheat Flour or Maida – 1 cup
(I used Whole wheat flour)
Banana – 1 large riped
Cocoa powder – 1/4 cup
Milk – 1/3 cup ( 80 ml)
Sugar – 1/2 cup
Oil – 1/4 cup
Baking powder – 1/2 tsp
Baking Soda – 1/2 tsp
Vanilla extract – 1/2 tsp

Method :
Peel the banana and mash it using a fork. You can use blender too.
In a mixing bowl add the mashed banana, sugar, milk, vanilla essence, oil and mix them well.
Seive in the flour, cocoa powder and baking powder, baking soda and gently fold it to make a smooth batter.

Grease a cake pan and preheat oven @ 180 degrees for 10 mins.
Pour the batter into the greased pan and bake @ 180 degrees for 35 mins. You can check once at 30 mins. A toothpick inserted should come out clean. Mine took exactly 35 mins.
Remove from oven, let it cool down for sometime and demould it. Cut and serve.
(You can pour Chocolate Ganache, it’s optional)

Whole wheat Banana Choco chips Cake:

Ingredients:

4 medium to large ripe or over ripe bananas - 300 grams
1.5 cups whole wheat flour or 180 grams whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
a pinch of salt
1 cup organic Jaggery powder
1/4 cup sunflower oil
1 teaspoon vanilla extract
1/2 cup milk or little extra if the batter is thick
Choco chips (optional)
10 halved walnuts, chopped or any dry fruits of your choice (optional)

Method:

Preheat your oven at 180 degrees c/350 degrees f. If using a regular oven, heat both the top and bottom elements. For a microwave convection oven, just preheat the oven.

Making banana cake batter:

Peel and chop the bananas. Add them to a bowl and mash them with a fork. You can also use a blender to mash the bananas.
Add Jaggery, oil and vanilla extract.
Stir very well so that the oil mixes with the banana puree and Jaggery
Add milk and stir.
Sieve whole wheat flour, baking soda, baking powder, salt directly in the bowl.
Fold the dry ingredients into the wet ingredients well, if the batter is thick than add little milk.
Add the chocolate chips and chopped walnuts and fold again. Apart from walnuts, you can also add raisins, pistachios or any dry fruits of your choice.

Pour the batter in a greased or lined loaf pan ( 7.5 x 4 x 2.5 inches) or round cake pan (7.5 x 2 inches).

Gently tap and shake the pan. Place the pan in the center rack if using a regular oven or otg.

Bake in the preheated oven at 180 degrees c/350 degrees f for 45 to 50 mins or till tooth pick inserted in the cake comes out clean.

When warm or cooled, slice and serve
