Laminated pastry or viennoiserie is closely trying to overtake the popularity of our doughnuts at Sapa. Which means we really need to understand viennoiseries’ technicalities super well to bring out the volume we need while keeping the croissants top notch. No easy feat at all, especially with our mini sheeter (Time to get a bigger one? 😬) on the work table.
Getting it right is a three-day process, and how do we describe the complexity? Let’s just say it’s like marrying the moodiness of sourdough fermentation to the perfection neediness of pastry. Every day is different, and I find the constant process of improving it everyday fascinating.
One thing that really made a big difference was butter, we now make our own butter slabs from two kinds to get the right fat content and flavour. Currently, we are trailing with a local Mysore brand and hopefully sweet fermented butter soon (that would be a big game changer). Ohh and I am super excited that we now add 10% freshly milled Paigambari wheat (an ancient local wheat variety) to the croissant dough, which we freshly mill in house everyday in our stone mill. It helps the enzyme activity and thus the fermentation, and adds just a touch of nutty and sweet.
So yeah, once the base dough is right, we can of course make all kinds of variations with it, which I would love for you guys to come and explore in our weekly menu.

Something Sweet and something cheesy.

We wanted to create two small Valentine’s specials for you, nothing too fancy or elaborate. Just two cute little ways of letting someone (or even yourself) know they’re special.

I wanted to work with pomelo and yogurt this year. Something light and fresh. I love when different textures create volume, crunch, or creaminess (it’s really about how you trap air!).

And a cheesy pretzel is just the best. With cheddar and Parmesan, and roasted garlic to round it all off.

One thing we are all blown away by is the sheer collaboration of the three teams. And mind you, Sona’s team is not from F&B, yet they set up an entire running café. From a washing station to a packing station and a tray trolley (which was given by Ashish). It is truly a work of goodwill pulled together from all around Hyderabad, which is already stunning. But seeing how beautifully our three teams collaborated to figure out solutions for the million little problems that can occur during a one-week café pop-up has been the most wonderful experience. Never was a finger pointed. All hands on deck was the motto, and there was deep fun in getting to know each other too.

Sona, our amazing host, has created a space where this can happen, a space where designers are coming together to have a platform to collaborate in their practice and create insane collectible furniture. The results are stunning pieces for everyone in Hyderabad to come see, gaze at, and marvel over, all under her guidance and appreciation.

The food, of course, was our classics. And Hyderabad received us so well. Especially the asparagus tart and the beesting, which were loved intensely. People popped in daily to make sure they could try everything; some guests even came out early just to ensure they got a pastry when they usually never leave the house at all. Familiar faces who make sure to come to all our pop-ups if they can truly warmed our hearts.

Hyderabad has been truly welcoming and endearing, and we are so floored by your hospitality, history, culture, and, above all, your people.

Long story short, we are on a break for a week. Closed between 12th and 16th January, 2026.

Actually there is no long story. We are just so full of joy from all the love that you guys give us. Thank you for making 2025 great for us.

As celebration of all the work that went into it, we are taking a small break. While the team rejuvenates and relaxes, the cafe will undergo a deep scrub and maintenance to get ready for another round 💃🏻🕺🏻

Festivals are full of warmth, food and losing track of time.
