So I know I have been underground for a while, but things were and still a bit crazy with everything spinning out of control. And then I got a call to make this Lightening McQueen cake. Vanilla Sponge with chocolate ganache. After I finished, could almost hear the Vroom, Vroom. And then I got a message which said "My mother-in-law likes it so much that she doesn't want to cut it and my son does not want to share it with anyone. This is only for me, he said. Felt good, hearing this.

Mums are special. And when it's their birthday, you go all out to make it an extra special day for her. Got a call. It's Mum's birthday, I need a cake. Not very big. It just has to have chocolate and a little butterscotch, a touch of whipped cream. And - Yes - What else. Oh some flowers on it. Ok I said and then got to work. And in the evening when she came to pick it up, her eyes lit and she said "It's just the way I pictured it." But later that evening I got a call. "Beta, she said, thank you so much for baking this cake for my birthday. It's so beautiful and tasty". I blinked my eyes a couple of times furiously and mumbled a "Your welcome". To all the Mums out there "We are because You are."

Working abroad brings in the big bucks, but there is no substitute for Mama's cooking. And then, he had a chance to taste one of the cupcakes someone else had ordered. "Bake me some so I can take them with me" requested this gentle giant. And so packed each one individually with the Kalhua buttercream between the cake, so that there would be no casualties on the plane ride. A couple of days later, I got a text. "I had a cupcake today. It was yum. Thank you so much." Most welcome I replied. And then whispered a prayer as I looked out of the window. "God keep our people safe out there."

Apologies for not putting up anything for so long. The house was getting a face lift. And then there was this cake - red velvet for a die hard football Manchester United fan. And no feelings did not change even if Jose Mourinho was shown the door. Carving the logo took a while but was absolutely worth it.
