I have been craving a simple light sponge cake for some days. But couldn’t quite nail a recipe i wanted to follow. In these days of sugar craft and modelling chocolate , my heart was truly beating to eat a simple cake that I could pop in my mouth the moment i laid my eyes on it and not spend five minutes peeling of the sugar over dose. So, In the midst of a hot weather, my body temp hot from fever and throat inflammation, and making a hot and spicy CKP Style crab curry. (Oh i ll write about my experience to the Andheri Fish market in another post. ). I was still undecided by afternoon. Then as if by magic I remembered a Hot Milk Sponge Cake recipe I had seen. Christ! Do u get it, all along I had clues. Remember the common word ”hot” in the weather, curry etc. Life always gives us clues as answers, but we don’t get it, right?
So here you have it. My version of the Hot Milk Sponge Cake made with Whole Wheat Flour , scaled down sugar and only 57 grams butter, is blissful with a cuppa tea. True to its name, hot milk with melted butter is folded into whipped egg and sugar mixture to get that perfect yellow sponge and golden crust...My tea is long over but I can’t stop at one piece...M a happy girl...
