Imagine a holiday .... Sun, sea and sand, and a pina colada.
Inspired by the desire to step out and a wish for a holiday... baked for a friend’s dad!

Pina colada cake inside... vanilla cake, rum, coconut cream and pineapple inside . Jagged edges and a fault line design for the sea and sand, done in dreamy Swiss meringue buttercream.

Oh, how I miss baking and decorating!! 💕

Ever struggled with round cakes of a diameter more than 8 inches? Started serving a few pretty slices in the beginning, and then ended up with odd, uneven sizes served to the most?

Some of my friends here asked for a bake-along recipe.
So I picked a really super simple one that I’ve been baking for years... and is tested till perfect!

So, what do you do with bananas that are overripe, and you’d hate to discard them, especially during these times. Bake banana bread!

If you bought a little too many... I’m not implying you’re a hoarder ;) ... or you couldn’t get your kids to finish them, and they turned ripe till they were beyond spotty ... actually turned black and squishy, that’s when they qualify to be baked into bread! And it could be a good way to trick the kids who tied to outwit you!

I bought just 4, I don’t like bananas, or most fruits for that matter...they were for my mum, and I forgot one in the bag it was delivered in for quite a while and had one that I could work with.

This recipe is for 1 banana, but can be scaled up perfectly.

*1 ripe (read spotty, black, squishy) banana
* 65 g all purpose flour
* 50g brown sugar
* 1 egg
* 3 tablespoons unsalted butter
* 1/4 tsp salt
* 1/4 teaspoon cinnamon powder
* 1/4 teaspoon vanilla extract
*3/4 teaspoon baking soda
* Chopped walnuts
* Choc chips

* set oven to 160C and Pre-heat. Grease and dust baking pan.
*Whisk together the flour, baking soda, salt and cinnamon powder.
* in another bowl mash the banana. Add the sugar, melted butter and vanilla and whisk together.
* Mix in the dry ingredients to the banana mix in parts folding it in. Don’t overmix.
* add in the walnuts and choc chips.
* Pour batter into baking tin.
* bake at 160C for 40 mins, check if done at around 30 mins by piercing with a skewer. If raw, bake for longer.

Some questions answered before asked:
* 1 cup measure of flour is about 125 g if you want to work with cup measures... the APF here is about 1/2 cup +
* feel free to swap brown sugar for regular white - color and texture will be different is all, if you’re a fan of the brown color ... caramelise a spoon full of sugar and add to the mix
* the butter and salt — Utterly butterly Amul lovers... skip the salt in the recipe. I always use Amul salted butter ... I’m a fan!
* the baking soda — can be swapped for baking powder ... you’ll need more of it ... maybe 3 times.
* walnuts for more fun, pecans for my videshi friends
* choc chips... fun++ nice look and added flavour! Don’t have choc chips? Steal two or three of those squares from what the kids are hoarding and chop those up.
* hand mixers welcome... more time to kill during lockdown? Pick up a whisk and do it by hand!

Biscuit Joconde is a light almond sponge cake, made in super thin layers which is known as La Joconde in French, (it is named after the Mona Lisa)

Made with almond flour and lots of butter, NO raising agents, the idea being to whip the eggs really well for the sponge, these are used in the layers of opera cakes, to wrap around other cakes and in constructing little desserts filled with mousse or buttercream.

This is a version with the same recipe, but done in small shallow moulds to double up as snacks/biscuits with tea.

This morning I thought of returning to my page after years to change the cover photo, and then hopefully go on and post some happy and bright things as we are all locked in and getting used to the ‘new normal’

I am overwhelmed that just by changing the cover photo, I received instant responses, messages in my inbox, texts on the phone, asking if I’m back for good!

No, I’m not baking for orders. I haven’t been much for last 2 years or more, being stuck with a health issue. Also I won’t be baking during this time so that I don’t waste anything from the pantry, for some fancy photos.

But am touched; realising you still follow my page. And I look forward to posting some images to send some positive vibes your way. I will try and share some sugar art.
