Rusted Mushroom Alfredo 🍝🍄 🌿

Ingredients (serves 2):
• Spaghetti – 180–200 g
• Butter – 1 tbsp
• Olive oil – 1 tbsp
• Garlic (finely chopped) – 1 tbsp
• Onion (finely chopped) – ½ cup
• Red bell pepper (finely chopped) – ¼ cup
• Carrot (finely chopped) – ¼ cup
• Button mushrooms (sliced) – 1 ½ cups
• Bok choy – 1 cup (stalks sliced, leaves torn)
• Dairy whipping cream – ¾ cup
• Full-fat milk – ½ cup
• Parmesan cheese (grated) – ¼ cup (+ extra to finish)
• Fresh basil leaves – a few

Seasoning:
• Garlic powder – ½ tsp
• Onion powder – ½ tsp
• Mixed herb seasoning – ¾ tsp
• Black pepper – to taste
• Chilli flakes – to taste
• Salt – as needed

Method:
1️⃣ Cook spaghetti in well-salted water until al dente. Reserve some pasta water and set aside.
2️⃣ Heat butter + olive oil in a pan. Sauté garlic briefly, then add onion and cook till soft.
3️⃣ Add carrot, bell pepper and mushrooms. Cook till mushrooms release and absorb moisture.
4️⃣ Add bok choy stalks first, then leaves. Toss till just wilted.
5️⃣ Lower the flame. Add all seasonings, then pour in cream followed by milk. Simmer gently.
6️⃣ Add parmesan and stir till melted. Toss in spaghetti with a splash of pasta water.
7️⃣ Finish with torn basil, extra parmesan and chilli flakes.

✨ Creamy, comforting and packed with veggies — perfect for cozy nights in.
