GLUTEN FREE CHOCOLATE BABKA

Babka is a sweet braided bread which originated in the Jewish communities of Poland(often referred to as simply a yeast cake.

Made with All Purpose flour,eggs,butter and sugar,this is a rich, laminated dough which might have chocolate as a filling.

It's been on my mind since long to convert regular confectionery into Gluten free versions so that people on a special diet can also enjoy without compromising on health or taste.

This Gluten free Babka was one such accomplishment for me as cakes,muffins and cookies are still within my comfort zone but trying to convert the complexities of normal AP flour with gluten into a millet based product was daunting in many ways.

In the pics, was the first try, yesterday, with millet flour,eggs, coconut sugar,butter & eggs.

Many more are going to be done before am open to orders to also get a vegan version of the same😊

Organic Gondh Laddoos

Gondh(Tragacanth/Acacia gum) is a winter super food.
Known for its many healing properties, this super food comes from a tree sap.

At Mojjo, we'll be making these laddoos for the entire winters (well, whatever winters we have here), with Jaggery and cow ghee, all organic.

BAGELS

Being gluten free shouldn't mean missing your favorite things....

We at Mojjo want our gluten free products to taste as normal as the AP ones without compromising on the taste and quality,sans the use of gums and artificial ingredients!

The job is a little difficult but worth every bit of time and hard work when a customer gets back with a really Hart warming review 😊😊

These are our gluten free & vegan bagels, made with our house blend of flours and zero additives, going out today.

𝙱𝙸𝚁𝚃𝙷𝙳𝙰𝚈 𝙲𝙰𝙺𝙴.

The cake in the post is very special!

This was my son's 10th Birthday cake and ut was special coz he designed and executed this on his own(except for the base).

A week before I was given the instructions on the type of cake that needs to be baked so that he can frost and decorate it as per his plain.
I was told to bake a Vanilla pound cake(in AP flour and not WW ), using white sugar and not jaggery and making a stiff white chocolate ganache.

Once the above was done the charge was then handed over to him to stack and frost it. I had to also hand him the fondant tools for him to make the tag of choice, 02 days in advance and was asked to keep off from giving any instructions on anything 😅

The entire cake from beginning till end, bore no mommy mark and trust. E when I say this, it was fabulous and effortless

I struggle to get smooth and 'perfect' look on my cakes but here a 10 year old does the job in 10 mins without fretting !

Am not at all a fan of white chocolate cakes but this one was delish.... ❤❤

Added this to the cake menu and will be executed by our little man only on orders..

Whole wheat Chocolate overload cake, went out for a little boy's Birthday .....

The chocolate ganache was made with 46% dark Couverture and the same was sweetened with jaggery.

Celebration cakes!

This whole wheat, dark chocolate, truffle cake went out for a little boys father's birthday..... Was filled and frosted with 55% dark chocolate and was sweetened with Jaggery......

Our celebration cakes can be ordered in whole wheat/gluten free/keto flours bases and are minimally sweetened. For special diets we use a zero calorie sweetener.

Whole wheat, Pear upside-down tea cakes...

I had ordered some delicious, Indian pears, all the way from Uttarakhand, through .trails and those were turned into these buttery, delicious delights, all week!

Mildly sweetened with Jaggery, these tea cakes are a perfect accompaniment to your evening Cuppa🙂
