After a long gap... Here's a Rich chocolate chip Walnut cake... Came out pillow soft, dense..... Happy with the outcome...
Recipe **
Dry ingredients :
Maida 1+1/4 cup
Sugar powdered 3/4 cup(you can adjust as per your liking)
Baking powder 1 tsp
Baking Soda 1/2 tsp
Cocoa powder 3 tbsp
Walnuts
Choco chips
Wet ingredients :
Curd 1/2 cup
Refined oil 1/4 cup
Milk 1/2 cup
Vinegar 1 tbsp
Vanilla essence
Procedure:
First mix vinegar with milk and keep it aside to curdle.
Mix /sieve all dry ingredients except Cocoa powder.
Mix Curd and oil to a smooth mix. Then add vanilla essence. Sift in the dry ingredients and mix together firmly. Add curdled milk and adjust to smooth, thick consistency. Make sure batter is not flowy.
Take a 6-7inch pan and grease and line with butter paper.
Por the batter evenly, tap in 2-3 times.
Garnish with the choice of nuts and chips.
Baking method. :
You can bake in OTG, preheated at 170Β°C fr 10 minutes, then bake fr 40-45 minutes till toothpick pierced comes clean.
Alternatively, you can preheat a deep kadhai fr 10 minutes , layered with some salt and a stand.
Keep the mould on the stand and cover the kadhai with a lid which covers the rim of kadhai and no heat can leak out.
Keep it on medium flame for 45-50 minutes.
Word of caution :don't keep checking on cake. At least not before 30 minutes have passed.
