This Christmas we decided to take it up a notch and challenge ourselves with this wonderful Traditional German Christmas Bread called STOLLEN (pronounced Shto-luhn)

The STOLLEN is a yeasted bread that is baked with an abundance of dried and candied fruits (sometimes soaked in rum), candied citrus peels, nuts and spices.

The most special part though lies in it's centre. Behold the glorious marzipan (almond paste) hidden beneath all the jazz. The subtle almond flavours from the marzipan uplift the entire bread making it a delight in every bite!

Paris Brest or as the French would say, "Pah-ree-breast"

Named after 2 prominent cities in France, it's capital PARIS and BREST, a naval city in Brittany, the PARIS BREST is a classic French pastry that is shaped to imitate the wheels of a bicycle inorder to represent the bicycle race that's run every 4 years between these 2 towns.

The components include a basic CHOUX pastry and classically a praline cream filling.

We're seeing many variations of this classic now and here's our version with -
-Pistachio Cream
-Raspberry compote and
-Raspberry jelly

The flavours of .in Pishori Pistachio Paste and Raspberry Puree pair beautifully taking this dessert to a whole other level.
