Tcharwan Alu or mutton liver is a, dish that showcases the intricate flavours of Kashmiri Pandit cuisine. Liver is first washed with cold water and then put in hot water, couple of boils to remove the extra dirt particles. Final rinse with cold water. Heat the mustard oil, add Asofedita (heeng), whole spices and then the mutton liver. Saute it nicely. Now add the potatoes, cut in medium size. Saute both the liver and potatoes for another 5 minutes... Finally add the masalas-kashmiri red chilli powder, fennel seeds, dry ginger powder, salt which impart a unit taste and aroma.
It's, served with plain steamed rice and accompanied with plain yogurt to balance the flavours.
