The Classic Chocolate Truffle cake made with pure chocolate is an absolute delight for chocolate cake lovers. For the chocolate ganache I generally use Van houten brand 46% dark chocolate variety and the taste is amazing. In future I am planning to use milk chocolate in making the ganache. For Cocoa powder I generally use Hershey's , Cadbury Christopher or Cocoa craft's cocoa powder. My Chocolate truffle cake has been one of my bestsellers for almost a decade. I never use compounds in my bakes as I feel that it lacks richness and the taste falls flat. In a market flooded with chocolate cakes made from compounds I think very few home bakers and commercial bakeries use pure chocolate. The price of pure chocolate has skyrocketed over the past few years but still those who believe in serving quality products use chocolate . So next time whenever you buy a chocolate cake just keep that in mind.

I made a Pineapple pie after a long ,long time. Pie is a dish that I find quite interesting. From the Apple pies of America to the meaty pies of Britain this is one dish that has evolved and has incorporated elements of different cultures.
According to food historians the humble pie originated in the ancient Egyptian civilization and it was further refined by the Greeks and Romans . The crust was originally meant for preserving and carrying the food . In medieval Europe pies were much more than a simple meal; they were a means of displaying cooking skills and prowess. Ornamental pies were made for large gatherings and feasts. Slowly different fillings with different spices began to be used and the pastry was made more refined. Today, it is a coveted dish that has taken on different forms but it still remains true to its original nature and I personally feel herein lies its mass appeal.
