Alot of steps, Yes!!!!
Worth it??? Oh Yesssss!!! Can’t call it Hyderabadi, Mughlai or Lucknawi... It’s just one made with a lot of love.
Recipe below:
Step 1:Marination of Chicken
Chop and fry 2 sliced onions till@brown. Add it to half kg chicken with 200gms Dahi, Salt, Red Chili Powder, Garam Masala, Fresh Coriander and Mint leaves, half a squeeze of lemon, one and a half tablespoons of ginger-garlic paste. You can also add a few drops of Kewra essence and 1/4 teaspoon of Elaichi Powder. Marinade for atleast 2 hours or overnight.
Step2: Cooking the Chicken
In a pressure cooker, add 3-4 tablespoons of oil. Once hot, add Khade Masale: Elaichi, Cinnamon Stick, Cloves, Bay Leaf, Black Pepper.Sauté till fragrant. Add 2 chopped onions and let them brown. Further add one chopped tomato and cook it all. Add salt, turmeric and coriander powder.Cook. Next, add in the marinated chicken. Further cook this and then cover with a lid for two whistles.
Step 3: Assembling the Biryani
Pre-soak one and a half cups of rice for 30 mins.Then, add it to a pot of boiling water with pepper, Elaichi, a spoon of ghee and little salt. Let it cook till 90% done. Drain, set aside to cool.
In a heavy bottom pan, layer it with half the chicken, add rice, fried brown onions, mint, coriander leaves, garam Masala, ghee, repeat.
Lastly, add in a few drops of Kewra Essence, Saffron Soaked milk, Few drops of orange and green Color and Ghee.
Lid it and cook on “Dum” for 12-15 mins.
Serve with Mint Raita and Saalan

Can never get enough of this super delicious Sabudana Khichadi (Tapioca Pearls Khichdi)
Recipe:
-Rinse about 250 gms of Tapioca Pearls/ Sabudana well and then soak it overnight.
-Drain in a colander and let it rest for 2-3 hours to get rid of the excess moisture.
-Heat some ghee in a pan and roast peanuts.(crush half and save the other half for topping it towards the end)
- In the same pan, roast potatoes till golden
- Add curry leaves, mustard seeds, Jeera and let them crackle.
- Next add in the potatoes, salt, red chilli powder, roasted cumin powder and give it a good stir.
- Add the Sabudana and toss, don’t overmix. Let it cook on low flame for 5 minutes and then cover it with a lid.
- lastly, add the remaining peanuts, chopped coriander leaves and serve immediately.

Let’s get started:
200gms Diced Pumpkin
1 large Onion
1 Medium Sized Tomato
6-8 Cloves of Garlic
Handful of Fresh Coriander Leaves
2 Teaspoon Oil(any, I used groundnut)
1/2 Tsp Salt
1/2 Tsp Freshly Crushed Black Pepper
3 Cups Water
Heat oil in a pressure cooker.
Add roughly chopped garlic.Sauté
Add onions and let them turn slightly pink. Further add tomatoes and give it a quick mix. Let it cook on low flame for 2 minutes.
Add chopped Pumpkin, coriander leaves, salt and black pepper. Cook for another 2-3 minutes.
Add 3 cups of water
(1 cup= About 200 ml)
Cover the lid and let it cook for upto 4-5 whistles.
Blend, Sieve and Enjoy!!

These gorgeous looking super soft and delicious fritters, also known as Appe or Paniyaram are super healthy. Made with minimal oil and packed with flavour, these make a good option for a quick breakfast or an evening snack to go with tea.
Recipe below:
1 Cup Semolina/Sooji/Rava
1/2 Cup Curd
1/4 Cup Water
Generously Chopped/grated Veggies
I used Carrots,Capsicum and Beans
Finely Chopped Onion
1 tsp chopped ginger
8-10 Curry Leaves
1/2 tsp mustard seeds
1/2 tsp salt
1/4 tsp red chilli powder
1/2 tsp Eno fruit Salt(optional)
Mix Semolina with Curd and salt and let it rest for 10 minutes. Then add all the ingredients,except the fruit salt and give a quick mix. In a small pan, add little ghee, add mustard seeds,
Curry leaves and let it all splutter. Add it to the batter. Let the batter sit for a few minutes while we get the pan ready.
Heat the Appe Pan on medium low flame. Add two drops of Ghee.
Once ready, add Eno Fruit salt to the batter with two tablespoons of water and let it froth.Mix,mix,mix....
Pour a spoonful on the pan and cover with a lid. Let it cook on low flame to ensure even cooking. Flip after 5-7
Minutes and cook to get an even colour.
Serve Hot with Chutney of your choice.

Got too busy with meetings and it was already time for Dinner!! Got my eyes on this Broccoli sitting in my fridge. And then the rest was history!
🥦 Sauté Ginger Garlic in little Sesame Oil and add Broccoli Florets
🥦 Add toasted Sesame Seeds, Crushed Walnuts, Mixed Herbs, Salt and Pepper.
🥦 Let it all come together.
Serve with Lightly Buttered Toast and a cup of Black Coffee.

Looks a lot like Idli! Of course yes!!! However, doesn’t need overnight soaking. Nor does it have any rice.This recipe is Pretty Instant, Super healthy and gets ready in no time.
Presenting Moongdal Masala Idlis.
The recipe calls for-
1 Cup Yellow Moongdal soaked for 40-50 mins
1/2 Inch Ginger
1 Green chilli
1/2 tsp Asafoetida (Hing)
1 sliced Onion
1 medium Capsicum
Curry Leaves as much as you like
1 Tbsp Rai Seeds
1 Teaspoon Turmeric Powder
Salt, RedChilli : To taste
Chopped Coriander

Wash, rinse and soak the Yellow Moongdal for about an hour. Once done, blend with ginger and greenchilli. ( avoid adding water) We need a semi thick paste like mixture. Add 1/2 tsp salt and mix.
Grease the Idli moulds and put the Idli maker with sufficient water on medium flame. Once the water starts to boil, you are ready for the next step.
Add 1 teaspoon regular Eno (fruit salt) to the dal mixture, give it a quick whisk, pour in the Idli moulds and steam for 7-8 minutes. You’ll know it’s done, when there is absolutely no steam or moisture over the Idli. Skewer/toothpick test also works. Remove the idlis, cut them in half and now we are ready for the Tadka.
Heat some oil in a pan. Add rai seeds, curry leaves, onion and sauté. Once the onions turn slightly pink add in the Capsicum,salt, Turmeric, Red chili powder and mix it all together.
Let it cook for 3 mins and then add in the Cut Idlis. Cover and lower the flame. Let all the flavours deep into each other. Turn off the stove, add Chopped Coriander and you are ready to eat this super nutritious platter!!!

No, it’s not Pulao and it’s not fried rice. It’s chunks of Paneer marinated with curd and subtle aromatic spices. Further cooked in hefty Onion-Tomato masala.
Long grain rice, partially cooked in boiling water flavoured with Khadaa Masalas.
Then, the best part: L.A.Y.E.R.I.NG
Rice... Masala Paneer... Fried Onions... Coriander... Mint... Saffron Milk... GHEE... Repeat!!! REPEAT!!!!
Top it with more fried onions, cashews, Kewra essence... Cook on DUM for atleast 30 mins.... Enjoy with mint and cucumber Raita!!
And... Once again..... with all the mehnat, it’s not Pulao😉
